You could make them a scrap book of their time together before their engagement and since. You could canvas their mothers for photos that you could include of when they were young. You could put this together and give it to them on their wedding day or the night of their rehearsal dinner.

I'll give this at showers, but it works for weddings as well. I've done cookie making kits, give a cookie sheet or two, big mixing bowls, spatulas, wooden spoons, and a cookie recipe book. Or I've done a crock pot with a recipe book just of crock pot recipes and thrown in a few dry ingredients as well. Picnic basket filled with gourmet food and wine (with plates, utensils, etc.)
Also, given their ages, you might want to see if they've registered anywhere. They probably need everything, and while the toaster, blender, etc., doesn't sound very romantic, it does help them set up housekeeping together. And that's the whole point of a wedding gift anyway. Good luck!

They are just starting out, so I am assuming that they have next to nothing. Some unique gifts could be taking photos from their wedding and having them printed and placed in one of those 5-10 photograph frames (they have them at target). It is personal and could be waiting on their doorstep when they came back from their honeymoon.
Something else unique could be a gift certificate to a fruit of the month or wine of the month club. They would think of you whenever a gift arrived.

filled with common spices and a stack of your favorite recipies.

my fave gift i got so far was a slot machine but realistically its a bit pricey. go with something they can do rather than put on a shelf ie helicopter ride, hot air balloon experience, boat trip.... good luck!
