I see a lot of good answers. Every fruit is some way is made into juice. .Avocados are processed all the time into paste. Watermelon is a good bet, but is used to make watermelon pickles. Lettuce is a very good answer, yet the Italians have a recipe for blanching it. Leeks also are only purchased raw, but are used in a gazillion recipes.

I think radishes. I have never heard of anything but having them raw.

The only item I can think of that has never been canned, frozen, etc. (although it has been processed if you consider being cut and bagged processing) is lettuce. It has never been canned or frozen or cooked.
