Any recipes or ideas? I was thinking plain ol' hamburger helper and mashed potatos. An ol' favorite. But anyone else got some better ideas?

Carbonara

Ingredients:

Salt and freshly ground black pepper to taste
1 pound pasta, such as spaghetti or rigatoni
1/4 cup extra virgin olive oil (enough to coat bottom of pan)
1/4 pound pancetta (Italian bacon),
chopped 1 teaspoon
red pepper flakes
5 to 6 cloves garlic, chopped
1/2 cup dry white wine
2 large egg yolks
Freshly grated Romano cheese
Handful of finely chopped fresh flat-leaf parsley, for garnish

Directions:

1. Put a large saucepot of water on to boil. Add a liberal amount of salt and the pasta. Cook to al dente, about 8 minutes.

2. Meanwhile, heat a large skillet over medium heat. Add the olive oil and pancetta. Brown pancetta 2 minutes. Add red pepper flakes and garlic and cook 2 to 3 minutes more. Add wine and stir up all the pan drippings.

3. In a separate bowl, beat yolks, then add 1 large ladleful (about 1/2 cup) of the pasta cooking water. This tempers the eggs and keeps them from scrambling when added to the pasta.

4. Drain pasta well and add it directly to the skillet with pancetta and oil. Pour the egg mixture over the pasta. Toss rapidly to coat the pasta without cooking the egg. Remove pan from heat and add a big handful of cheese, lots of pepper, and a little salt. Continue to toss and turn the pasta until it soaks up egg mixture and thickens, 1 to 2 minutes. Garnish with parsley and extra grated Romano.

Shepherds Pie

1 1/2 lb ground beef
1/2 onion, chopped
1 stalk celery, chopped
1 can Ranch Style beans,drained and rinsed
1 can Rotel, drained
fresh or frozen corn

4 or 5 potatoes, chopped and boiled
butter
sour cream
ranch seasoning packet
1 can croissant style biscuits

Brown the ground beef with the onion, garlic and celery, Drain, add rotel, beans and corn. Salt and pepper to taste.
Make mashed potatoes, adding the butter, sour cream and ranch seasoning mix to taste.
Line a 12 x 9 inch baking pan with the croissant dough, opened.
Bake the dough for a few minutes. Put in the meat mixture with the mashed potatoes on top like icing. Bake at 350 for 20-30 mins or until everything is hot.
You can change this recipe according to what you have on hand, or what you like, just stick with the biscuit crust, meat filling and mashed potato topping.

Yes. You can try making something called spicy broccoli and fettucini.

Heres the recipe:

You will need:

Broccoli florets (12- 16 ozs frozen is the fastest)
Fettucini noodles
extra virgin olive oil
black pepper
garlic (powder or a 1/4 clove, chopped)
crushed red pepper
mozzerella cheese
and maybe some cashews or peanuts. The original recipe calls for pine nuts, but those are super expensive, lol.

So you cook the fettucine in a saucepan, until its tender.
Meanwhile, break out a frying pan, and toss in the defrosted broccoli florets, and a couple tablespoons of the Xtra virgin olive oil. Throw in either a quarter clove of garlic, or just sprinkle in the powdered kind, a teaspoon is good, to start.
Then toss in some crushed red pepper, about a teaspoon.
and then sprinkle a little black pepper on top, and stir. This takes about 10-15 minutes, including prep time.
When the noodles are done, just leave them in the colander, (strainer) DONT RINSE, and throw a dollop (a stirring spoonful) of butter or margarine on them, and stir. This is called "tossing the noodles in butter"
Serve the butter coated fettucine on plates, and spoon the broccoli on top. Then sprinkle the cold mozzerella cheese (shredded) on top of the broccoli. Place the nuts around the outside of your creation, and VOILA!!!

OMFG it is SO good.

Shipwreck Casserole
An old-fashioned "hamburger hot dish" from an old newspaper clipping.
1 cup chopped onion
2 medium potatoes, sliced
1 pound lean ground beef
1/2 cup uncooked long grain rice
1 cup diced carrots
1 cup chopped celery
salt and pepper
paprika
1 can tomato soup
1 cup boiling water
Butter a 2-quart casserole. Layer with onions, potatoes, ground beef, rice, carrots, and celery, sprinkling each layer with salt, pepper, and paprika. Combine soup with boiling water; pour over all. Bake at 300° for 3 hours.
Shipwreck casserole serves 4.

I grilled out. Chicken with a rub under the skin and baby potatoes in foil with olive oil and herbs. My daughter loved it. But it's 10:30 here, maybe a little late to fire up the grill. How about breakfast? Bacon, eggs, potatoes or an omelet. Slice some fresh tomatoes and you're good to go.

Quick and good (and for a man) Hmmmm..... You would be suprised how well received chicken nuggets are from the frozen section. I cook ALL THE TIME, but when I do a simple perservative rich dinner my husband loves it. Also, throw a burger on the BBQ with some chedder or swiss cheese. He'll love it.

If you have some nacho chips in the cupboard, your ground beef, salsa and cheese, you can make a quick oven nachos . Brown the beef with onion, scatter nachos chips on cookie sheet, top with beef, salsa, olives if you want, lots of cheese and bake until cheese is melted. Serve with a green salad, and it is quick, different, and clean up is a breeze...Gee--maybe that's what I'LL have tonight!
