1. Sliced fresh tomatoes
2. sliced fresh mozerella
3. clove of fresh garlic, smashed, paper skin removed, minced, olive oil and balsamic vinegar for a simple dressing.
4. fresh basil leaves, whole or chopped or ripped.
Mix GOOD olive oil (dark green, or kalamata olive oil) and balsamic vinnegar. Arrange tomatoes/mozzerella alternately (one tomato slice, then one cheese slice, etc. put the garlic in with the oil/vinegar mixture. ;pour over the tomatoes. sprinkle a little sea salt on top. I usually do this with a bed of spinach or mesculin leaves below the arranged tomato/cheese arrangement. In fact I'm bringing this dish to a surprise birthday potluck on Saturday! yum!

Fresh tomatos are the best for easy salads. Some of the easiest things to do are; 1. Just add salt and fresh ground pepper and put on a attractive patter. (simple yet so good and great for entertaining) 2. Whisk together 1/2 cup olive oil, 1 tsp. sald, 1/2 tsp. pepper, 1/3 cup apple vinegar and 2 TSP. Dijoin mustard. Pour over large slices of tomotos and mariniate for maybe 1 hour and serve. (also makes a good lunch with tuna fish on top) Tomatos are easy. Try whatever sounds good.

Tomato Bruschette

slice one end off tomato and squeeze to remove seeds chunk them up and place them in a colander sprinkle about a tablespoon of sugar on them and 1 teaspoon of salt let some of the juice drain out about 1 hour mix together in a small bowl1/3 cup oil, 1/3 cup lemon juice, 1/3 cup white balsamic vinegar,1 teaspoon of garlic, 1 teaspoon of basil 1 tablespoon of sugar mix well pour over tomatoes allow to sit at room temp I add a sliced onion and a can of black olives but you do not half to I serve these tomatoes on warm garlic bread and sprinkle with mozzarella cheese yum

Take a tomato, not over-ripe, and cut into slices
as you would a cucumber; take a small onion and
cut it up fine as you can; sprinkle it over the
tomato slices; add salt, pepper and vinegar at
discretion.

Pickled Tomato Salad
Categories:
Yield: 6 Servings

MMMMM---------------------------SALAD-----------------
3 lg Tomatoes; cut in eighths
1 md Green pepper; chopped
1 md Red onion; cut into rings
2 tb Minced fresh basil

MMMMM--------------------------DRESSING---------------
1/2 c Apple juice concentrate
1/2 c Cider vinegar
1/4 ts Salt
1 tb Oil
1 ts Sugar
1 tb Pickling spices; tied in a
.. cheesecloth bag

Bring dressing ingredients to a boil. Reduce heat;
simmer 5 minutes. Let cool to room temperature;
mix with combined salad ingredients. Chill,
covered, at least 1 hour before serving.

Sugar

Peel tomatoes and cut in half. Put about 2
tablespoons mayonnaise on top of each one,
sprinkle with about 1 teaspoon sugar. That's it
and it's very good.

large cucumber, peeled,de-seeded,and chopped
2 large tomatoes, chopped
3 scallions, chopped (both white and green parts)
1/3 teaspoon salt

Amount Measure Ingredient -- Preparation Method

1 lg Tomato
1 ea Cucumber
1 sm Onion
1 tb Fresh dill
Salt
2 ea Green chili peppers, chopped
1 tb Vinegar
Oil & lemon dressing

Cut tomatoes into 10 wedges. Pare the cucumber; cut it in half
lengthwise & then in thin slices. Cut onion in half lengthwise &
then slice paper thin. Put the onion slices into a bowl, sprinkle
with salt & squeeze in the palm of a hand. Rinse & pat dry.
On a platter, arrange in succession rows of tomatoes, cucumber slices
& onion pieces. Sprinkle with the dill, salt & chili pepper. Mix
vinegar & dressing & pour over the salad enough to moisten it well.

Classic Greek Salad
INGREDIENTS:
2 tablespoons McCormick® Gourmet Collection® Greek Seasoning
2 tablespoons fresh lemon juice
2 tablespoons white wine vinegar
1/2 cup olive oil
1/4 cup crumbled feta cheese
1 head romaine lettuce (or 8 cups mixed salad greens)
1 medium cucumber, peeled, halved, seeded and sliced
1/2 cup kalamata or black pitted olives, sliced
1 tomatoes
1/2 medium red onion, cut into rings

DIRECTIONS:
Blend together Greek seasoning, lemon juice, vinegar and oil in a small bowl. Gently stir in cheese. Refrigerate 15 minutes or longer.
Meanwhile, wash, dry and tear lettuce or salad greens into bite-size pieces. Place lettuce and vegetables in a large bowl. Just before serving, stir dressing; pour over salad. Toss to coat. Garnish with onion slices and extra feta cheese, if desired.

Is this a trick question? Use what you have .. without you listing what you have .. sounds like you have no supplies ... get fresh basil, olive oil, red wine vinegar, salt & pepper, maybe a little parmesan ... dice tomatos .. add a basil chiffonade, 1 T olive oil, 2 t red wine vinager, and season to taste with the rest of the ingredients.

serve with crusty bread ...

Just slice on a plate and drizzle with oil (olive if ya got it), and some vinegar (vinegar's cheap!) Throw some pepper on there, and eat! If you have some grated cheese, top it with that!
Or, chunk some in a bowl, add some canned black beans, onion, garlic and corn (canned is fine). Chill to let the flavors blend.

Tomatoes, cukes, and onions, cut in bite sized pieces, and tossed with your favorite Italian dressing (I like Good Seasons). Holds up well, so it'a still edible the next day. That's economical, you don't have to throw away the left-overs. Matter of fact, pile it on a sandwich, (something on a bun, hoagie or sub) the next day. Yummy

6 cups salad greens, any variety including iceberg
3 or more tomatoes chopped up
1 cucumber, sliced thinly, or any other vegetables you have on hand.
6-8 slices of bacon, crisp-cooked, and chopped
Any other toppings you have on hand, like cheese, croutons (or anything crispy in the cupboard), sliced black olives if you have them.

Any dressing you like and have on hand. You can also use some mayonnaise thinned with milk and add minced garlic or garlic powder.
