My wife is the cook in our house (I gained 50 pounds in our first year of marriage) and she uses Gala or Fiji apples. They are sweet and crisp.
If you still have trouble, you can carmelize the apples first by sauteeing them in a skillet with cinn/sugar over medium heat.

I like Macintosh apples, or a mix of both macintosh and granny smith. Mac apples are a bit more tangy, so you can add sweetness with your other ingredients to enhance the flavors. Also, they are a bit denser, which should solve your water-pie problem. A mix of both macintosh and granny smith apples is a good balance, too. Good luck!

The very best apples for pies are a green translucent apple, called Lobo in Quebec, Canada. They are very tart, and have a superb flavour, but only come on the market in early Fall.
However, other excellent apples for baking are a mixture of Cortland, Spy and/or Mackintosh.
Check out http://allrecipes.com for flavouring the apple mixture. Cinnamon, sugar and grated lemon rind are traditional.

Crispins (Mutsus) are really nice in a pie; they're not as tart or firm as a Granny Smith and they keep their shape really well.

You need to get a baking apple. It would be best if you could get fresh ones out of orchard that haven't been processed to be store bought.

I know what you mean. I prefer to use brae burn apples. They are a heartier stronger favored apple. Try them in your next pie.

mix any cooking apples (harder varieties) with the canned ones.add a little cinnamon, nutmeg some raisins and a little cornstarch to make it less wet. Should help.
