Cheddar cheese is naturally very pale in color almost white and coloring is added to make it more "cheddar like". Coloring is usually done by adding powered annatto seeds which do not affect taste or safety. The color helps distinguish it from other cheeses that are left white like Monterrey Jack

the orange color is an addative. get a book on cheese making from your library or book store. I used to have one, but my ex kept it in the divorce.
