BROCCOLI SALAD
An original from Donna's Kitchen
4 slices bacon, microwave crisp, dried and crumbled
1 head broccoli, top removed and cut into one inch pieces, balance chopped in food processor
1/2 cup raisins
1 (or more) raw onion, chopped
1/2 cup almonds, toasted slightly in oven
Dressing:
1/2 cup lite mayonnaise
1 Tbl. red wine vinegar
1 Tbl. sugar
Mix dry ingredients. Pre-mix mayonnaise, vinegar and sugar. Add to dry ingredients. Mix well. Adjust taste if needed.

Broccoli Salad

4-5 cups Broccoli flowerettes
1/2 red onion, sliced
1/2 cup cheddar cheese, grated
1/2 lb. bacon, fried and chopped
Dressing (below)
PREPARATION:
Combine all ingredients except dressing. For dressing, combine 1 cup Miracle Whip (no substitutions), 2 Tablespoons vinegar, and 6 Tablespoons sugar. Mix well, and pour over salad ingredients. Mix. Chill and serve.

Broccoli & Cauliflower Salad
INGREDIENTS:
1 head cauliflower
1 bunch broccoli
2 small onion, sliced and separated
1/2 cup mayonnaise
1/3 cup vegetable oil
1/3 cup vinegar
1/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 slices bacon, cooked and crumbled
PREPARATION:
Wash and trim broccoli and cauliflower. Break cauliflower and broccoli into florets. Combine remaining ingredients except bacon. Toss gently and chill several hours or overnight Garnish with bacon.
We sell this at my family's deli. It is one of the most popular salads that we serve.

BROCCOLI SALAD WITH PEANUT VINAIGRETTE
4 1/2 cups broccoli florets
1/2 cup roasted, unsalted peanuts
1/2 cup olive oil
1/4 cup red wine vinegar
1/2 cup water
1/2 tsp. salt
1/8 tsp. ground black pepper
Bring a medium saucepan of salted water to a boil. Blanch broccoli florets about 3 minutes. Immediately refresh in a bowl of ice water and drain.
Blend nuts in a blender or food processor until fine. Be careful not to over process. Wisk nuts with remaining ingredients in a bowl until a vinaigrette is formed. Add broccoli, toss and serve. Can be stored in refrigerator 6-8 hrs.

This is so easy and good too.
Cut broccoli florets or buy it cut in a bag.
Put it in a marinate container
Add one bottle (for a party you may need another bottle)
of Russian salad dressing (or French if you like it better)
Let it marinate over night.
People will ask you for the recipe and then
when you tell them they won't believe you.

INGREDIENTS:

2 (6.5 ounce) jars marinated artichoke hearts, sliced
3 large tomatoes, chopped
3 bunches green onions, chopped
1 (8 ounce) bottle Italian-style salad dressing

DIRECTIONS:
In a large bowl, combine the broccoli, red onion, olives, artichoke hearts, tomatoes and green onions.
Add the dressing, toss, cover and refrigerate for 24 hours. The dressing will serve as a marinade and the vegetables will remain fresh, crunchy, yet easy to chew!
