Chicken Breasts with Rosemary
INGREDIENTS:
4 chicken breast halves, bone in
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon crumbled fresh rosemary leaves or 1/2 teaspoon dried
1 1/2 cups light cream
heated milk
chopped fresh parsley
PREPARATION:
Wash chicken and pat dry. Combine flour, salt, pepper, and fresh or dried rosemary in a wide shallow bowl or pie plate. Dredge chicken breasts with flour and rosemary mixture. Place in a shallow, lightly buttered baking dish.
Pour cream over chicken. Bake at 325° for about 1 1/2 hours, turning chicken after first 45 minutes. Thin cream sauce with a little hot milk, if necessary. Garnish with chopped parsley, if desired.

For the Sauce

tablespoons
Butter
3
tablespoons
Flour
2
cups
Chicken Stock
Salt and white pepper to your taste

tablespoon
Italian Parsley chopped
Preparation
Serve this chicken over the Dried Cranberry Challah Dressing.
In large saucepan, place chicken and add remaining ingredients. Bring to a boil and immediately turn heat down to a simmer. Simmer 20 minutes. Cook, covered, over medium high heat until liquid boils. Reduce heat and simmer 20 minutes. Remove chicken and vegetables to platter; keep warm. Strain stock and reserve 2 cups (for sauce).
Melt butter in a saucepan over medium heat. Stir in flour and cook over medium, stirring constantly, until mixture is smooth and bubbly, about 1 to 2 minutes. Slowly stir in stock. Heat to boiling, stirring constantly. Reduce the heat to low and cook for 5 minutes, stirring occasionally. Season to taste with salt and pepper. Add parsley. Makes about 2 cups.
To serve: Slice chicken breast on a diagonal and place onto plate, pour sauce over breasts and serve.

6 skinless, boneless chicken breast halves
6 ounces tomato basil feta cheese, crumbled
1/4 cup Italian-style dry bread crumbs, divided

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Place chicken breasts between 2 pieces of waxed paper. Gently pound chicken with flat side of meat mallet or rolling pin until about 1/4 inch thick; remove wax paper. Place 1 ounce of feta cheese in the center of each chicken breast, and fold in half.
Spread 2 tablespoons bread crumbs in the bottom of the prepared baking dish. Arrange chicken in the dish, and top with remaining bread crumbs.
Bake 25 to 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

ok u get ur chicken and marinade dem in sum olive oil, salt pepper and lemon juice, leave for as long as u can best overnite but 20 mins minimum!! get ur pan very hot and sear both sides getting a good colour on em sprinkle with thyme and put onto an oven tray and cover with honey, bake at 200c until cooked:) its nice served with pasta and fried mushrooms

wash and marinate in Italian dressing at least an hour. over night is great. i wash ans soak and freeze this way on shopping day so to cook i just thaw and grill. so grill with chunks of (also marinated) green pepper, onion, tomato and mushrooms. serve with baked potato and corn on the cob. try grilling the corn too!. husk almost all the way then grill 4 minutes on hot grill 4 sides. yummy.
