Butter has a fairly high salt content, as well as being very fatty. These qualities greatly reduce the chance of any pathogenic bacteria infecting your butter, at least in the short-term. Keep the butter covered and use it within 7-10 days and you should be OK.

It is totally ok not to refrigerate butter. However, just like milk or eggs it will shorten the life. So I wouldn't put all of your butter in the cupboard instead of the fridge, but a butter dish with your butter block for a week or so is fine. My biggest complaint is when the sun comes in through the windows and melts it...so sometimes mine goes back in the fridge for that reason.

It should be refriderated but my grandma never did either and it always tasted better that way. Now they have these things called butter bells. They are made for leaving your butter on the counter. It is an inverted cup that fits into another cup that holds about a half inch of water and you can leave the butter out for thirty days, if you change the water ever so often. I have one it's great.

The reason there's salted and unsalted butter is because salt is a preservative. Butter, like all products with fats/oils will go rancid, refrigeration slows this down but won't stop this.

It depends on how fast you use butter. Myself, I leave a stick out, one in the fridge and the rest in the freezer (butter is a great product for freezing)

The butter I buy comes 4 sticks to the pound.

We leave our butter in a butter dish and have never gotten sick from it. We prefer it because if you take it directly from the fridge, you can't spread it on anything. Butter is not like mayonnaise, it does not spoil if left out at room temperature.

You can leave it out for a little while, but it really needs to be refrigerated.

Do you buy it at room temperature? I'll never understand that one. People leave it out so that it can be spread more easily. But, they've made many advancements in the process, so it can be spread easily while still refrigerated.

I think it is safe to leave it out. I've always left it out, and I have never gotten sick from it. So I think it should be fine!
