My garden is growing cucumbers like crazy and we can't keep up to them, I was wondering if anyone knows any recipes that involve cucumbers like cucumber salad or anything of that nature. Thanks!

My future mother-in-law makes an awesome cucumber salad....slice cucumbers medium/thin ( 6 - 8 if you need measurements) Slice 1 to 2 onions & mix white vinegar, sugar & mustard seed to make a marinade...Mix all together & chill at least 4 hours before serving. Goes great with all the other fresh veggies you have....

This is my favorite summer salad. It's nice, light, and tangy!

Cucumber Salad

3 cucumbers, sliced thin
kosher salt
1/2 red onion, sliced thin
1 cup white vinegar
3 teaspoons sugar
dill, to taste

Put sliced cucumbers in colander.
Add salt, and press with plate covered by a heavy can, for 30 minutes.
Rinse, and in bowl add remaining ingredients.
Chill up to several days, and serve

I call this "Summer Tuna Salad" - cube or chunk cucumbers in a big bowl, add lettuce (throw a bag salad on there for convenience), add some fresh basil or oregano (or dried), and one or two cans of tuna (packed in water - make sure to drain the can); drizzle with some olive oil and vinegar, mix together and chill for about an hour. I serve this on kaiser rolls. Delish! Healthy, too.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1-2 large fresh cucumbers
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over pasta, rice, or mashed potatoes.


CREAMY CUCUMBER SALAD
3-4 cucumbers, peeled and sliced
1/2 red onion, sliced thin
1-2 tomatoes, diced (optional)
1-1 1/2 cups Hidden Valley Ranch or Cucumber Ranch dressing In large bowl, combine all ingredients, tossing to coat the vegetables. Place in refrigerator and chill before serving.


ITALIAN CUCUMBER SALAD
3-4 medium cucumbers, peeled and sliced
3 tomatoes, cut into 8th's
1/4 cup crumbled feta cheese
1/3 cup garlic croutons (optional)
2 tbsp. walnuts (optional)
1 1/4 cups Red Wine Vinaigrette or Vinaigrette of your choice

In bowl, combine all ingredients, toss with vinaigrette and chill before serving.

I like to put
2 Tomatoes, cut into eighths
2 Cucumbers, sliced
1 onion, sliced
3 Tbsp Sugar
3 Tbsp White Vinegar
3 Tbsp Water
1 Tbsp Dry Dill

Mix all ingredients and refrigerate overnight.

My family loves cucumbers they eat them peeled sliced with lemon juice salt and cayenne pepper. My mother used to make them sliced thinly in a bowl of vinegar and water with a little salt. Your question is making me want to go to the store to buy some.

1 cucumber
1/2 bell pepper
1 tomato
1/2 onion
dice all in chunks
Italian dressing to cover

or1/2 cup vinegar and 1/2 cup water and 1/4 cup oil and the spices you like blend in the blender and pour over the veggies

this works good also poured over a salad

store airtight in fridge up to 3 days...make it and give it to your friends

One of the best things to do is to make pickles. Use "Mrs Wages" quick process kosher dill pickle recipe. Your pickles sliced or speared will taste better than store bought. This company also has sweet and bread & butter. Their site is www.mrswages.com. Also you can take young cumbers and saute them with butter & garlic for a great taste. I do howerver wonder why the cucumber gets the sole name for being called a pickle!
