I have about 1 hour to come up with something (other than eggplant Parmesan...made that yesterday). I'm hoping for maybe something with olive oil, garlic & onion...etc.

yum, yum pink pink...that sound great! I have a hunk of provalone...wonder if I could substitute that...also no fish paste, but I could grill a few shrimp and chop & top? What do you think?

Thanks for all you answers. I have enough eggplant to try all the ideas. Funny thing, I saw a program late last night, (after dinner) about how to make baba ganush...I'm going to try that tonight. I planted 2 eggplant, plants in the garden this year and they have grown into the size of a medium size shrub. I have never had such good luck growing them before. So far these 2 plants have produced 15 medium sized eggplant, with at least 20 babies still growing and at least 50 more blooms...I've never seen such a thing!

slice the eggplant in thick rounds, spread olive oil and minced garlic on it. grill or broil. place it on top garlic toast, layer with goat cheese (or shaved parmesan). top with anchovie paste. can add other grilled veggies too. peppers, portabella mushrooms, zucchini.

Try EGGPLANT SALAD! grill the eggplant untill soft, removed the skin and cut it the way you like,add fresh tomatoes,onion,and fish sauce, or just a pinch of salt.ready to served. you may also try EGGPLANT OMELET. grill the eggplant with the stem intact.remove the skin press or flatten it fork,beat eggs with a pinch of salt,dip the eggplant into the beaten egg before frying.

You can make Baba ganush. You roast the eggplant untill soft, then blend until smooth adding garlic, onion etc. There are some really good recipes out there for it.

cut eggplant in half long ways and remove seeds, set aside, brown ground meat with onion,bell pepper and seasoning[this is all to personal taste and how big the egg plant is you are working with] butter the egg plant on meat side and place in baking dish with 1/4 to 1/2 inch of water or wine of your choice in bottom of pan, put g-meat mixture in the hollow of the egg plant and bake 325 degree until tender- about 45 to 60 minutes on average, when tender turn off oven and cover top of mixture with cheese of your choice, leave in oven to melt cheese. serve with rice as a side dish or you can mix the pre cooked rice with the meat mixture. yum yum. you can do the same with zucennie squash. sorry that one i can't spell. hope you figure it out.

Eggplant is best cooked with FISH PASTE.

Spread fish paste on top of sliced eggplant. Then pan-fried. It tastes GOOD!
