I think you mean Sous Chef
Sous is French for 'under.' A sous chef would be under the chef or the head chef.

sous chef usually does the actual cooking in a big restaurant.....where the executive chef is usually busy planning menues hiring and firing people. ordering food and crap like that and usully does less of the grunt work
