I spent enough time in the hotel/restaurant industry to know it is always 45 minutes for several reasons. First, it is assumed that it will take a table of four people 1 1/2 hours to order, eat, and pay for their meal. Assuming that the restaurant is half full when the busy period of the evening is starting, staff also assumes that approx. 1/2 of the tables will be turning over within a particular cycle. So, 45 minutes is the time most people are told. Most times it takes less, a more pleasant experience than being told 15 minutes then waiting 30 or more.

More than 60 requires extra syllables to say: "hour AND 5 minutes"

Less than 45 makes the place sound like a dump: "hey, welcome to Denny's, there's a seat right here waiting for you!"

An hour will send people packing, but 45 minutes sounds manageable.

I really don't know. Do you like the guesses?

It's not always 45. I've been told anything from 10 to an hour.

For the same reason that the service manager tells you over the phone, "They're just pulling your car out into the lot."
