My recipe says scale the fish and then remove the skin - that doesn't make any sense. Can I just scale the fish and then fry it with the skin on? What kind of fish is the skin not edible??? THANKS!

1) You don't HAVE to remove the skin, but some people don't like the texture of fish skin (me included). It's up to you and whomever you're cooking for. But, generally, when you bread and fry a fish fillet, you take the skin off first.

2) There are no scales on a trout, so you're good there.

3) Some fish skin is very tough and rubbery (shark, swordfish, halibut) so I wouldn't want to have to chew my way through it...nor would I wish such torture on my dinner guests!!!

on trout after you have gutted the fish leave the head on to make this easier.
grab the body real tight and grab the head.
move the head back over its back until you hear a snap and then you will have the head and a little skin attached.
pull the head toward the tail and grab the top of the spine with your free hand and the skin and scales will just come off in one sheet.
just be careful around the ventral fins (stomach side) as the meat will tend to tear right there.

with no head work your fingers under the skin around the top of the fish to get it started and then peel it off.

Most fish skins are edible, except those poisonous ones.
However, some fish skins do not taste good. That is why people remove them before frying. Trout skin should be okay.

it's up to you. the skin can be left on if all the scales are removed some people believe that there is more flavor with the skin on but others prefer no skin I say if you haven't tried fish with skin on go ahead give it a try if you don't like it next time remove it. but if you don't try it you will never know which way you prefer.

you can leave the skin on for rainbow trout the only thing about leaving the skin on is that itll shrink while cooking and cause the fish to be C shaped..... you could score the skin with a knife and that should keep it from distorting the shape.....unless presentation isnt an issue.

Leave the skin on. I have done it plenty of times. It keeps it all together. If you take off the skin the fish will fall apart. Take it off on the dinner plate when you are just ready to eat it. It sounds really good. You can eat the skin if you want it won't hurt.
