2 medium garlic clove(s), minced
1 medium onion(s), diced
2 medium carrot(s), diced
1 medium sweet red pepper(s), diced
1 medium stalk celery, diced
2 small zucchini, diced
2 cup green cabbage, shredded
2 cup Swiss chard, chopped
2 cup cauliflower, small florets
2 cup broccoli, small florets
2 tsp thyme, fresh, chopped
6 cup vegetable broth
2 Tbsp parsley, or chives, fresh, chopped
1/2 tsp table salt, or to taste
1/4 tsp black pepper, or to taste
2 Tbsp fresh lemon juice, optional
Instructions
Put garlic, vegetables, thyme and broth into a large soup pot. Cover and bring to a boil over high heat; reduce heat to low and simmer 10 minutes.
Stir in parsley or chives; season to taste with salt, pepper and lemon juice. Yields about 1 cup per serving.

RECIPE: "Cream" of Cauliflower Soup
I just whipped this up tonight when I was in dire need of something filling, but low points. It actually ended up being a ZERO POINT soup, with 1 point for the freshly grated Parmesan cheese. It was very tasty!
I started with a recipe from Dotti's Weight Loss Zone and fiddled with it, using ingredients I had on hand.
1 head cauliflower
1 teaspoon olive oil
4 teaspoons minced garlic
6 cups fat free chicken stock
1 teaspoon Italian seasoning*
salt and pepper to taste
1 teaspoon garlic powder
Put oil in pan and sautÈ garlic. Add all other ingredients and cook 1 hour. With the back of a wooden spoon, break up all the cauliflower chunks to small pieces.
Using a stick-blender, puree the soup so that it achieves a creamy consistency. You can do this to your own personal taste. I pureed it so that I still had little chunks of cauliflower throughout the soup.
Serving Size: 1 cup
Points Per Serving: 0 (zero)
Recipe Notes: The original recipe called for adding 1 tablespoon of freshly grated Parmesan cheese to each serving. The soup is good "as is", though the cheese did add another layer of flavor. If you have the points available, I'd recommend adding it. I'm also thinking of trying it with some Velveeta Light mixed in to make a creamy cauliflower-cheese soup.
*I didn't have Italian seasoning. I used basil, parsley, oregano, and a few other things I had on hand.
Update: I tried warming this up with Velveeta Light for lunch and wasn't particularly impressed with the flavor. It was much better with the Parmesan cheese.

IT's called garden vegetable soup - O points
From the little book they give you with the points in it
2/3 cup sliced carrots
1/2 c diced onions
2 garlic cloves minced
3 cups fat free broth (any kind chicken is best though)
1 1/2 diced green cabage
1/2 c green beans
1/2 c diced zucchini
1 T tomato paste
1/2 t dried basil
1/2 t dried oregano
1/2 t salt
Saute carrott, onion, & garlic on low 5 min
Add everything else but the zucchini and cook for another 15
Add zucchini and cook for 3-4 more minutes
Serve hot

Weight Watchers 1pt Soup
anyone on a calorie reduced diet should try this it is delicious and soooo easy!!! For those of you not on a calorie reduced diet, this is great with a loaf of home made bread.
28 ounces minestrone soup
28 ounces vegetable soup
28 ounces tomato puree
12 ounces canned corn niblets
19 ounces kidney beans
8 servings
1. Rinse beans.
2. Add cans together, I use Habitant soups.
3. Optional: garlic powder, parsley or hot sauce.
4. Enjoy!
5. 1 bowl = 1 pt.

2 cups water 2 cups tomato juice 1 carrot, diced 1 onion, diced 1 tsp dried basil 1/2 cup green peas 1/2 red pepper, diced 1 cup broccoli, broken into florets 1 cup cauliflower, broken into florets Directions Heat water (or stock) and tomato juice (or V8) to boiling in a medium sized sauce pan. Saute carrot and onion in a small amount of water or stock in a separate frying pan. When they start to soften, add the basil. Keep stirring until tender. When they're tender, drop them into the stock/juice mixture, throw in the rest of the vegetables and heat through for 5 minutes.

Both are good for you, each fruit/vegetable has different vitamins. Therefore as more variety, as better. Vegetables have generally less sugar than fruits.
