I'm doing research about 'wild food' in Britain (i.e. stuff you're not going to see on the supermarket shelves). Has anyone ever heard of people cooking and eating wild animals? I've heard of a restaurant that serve squirrel (they call it tree rabbit), but wonder if you've heard of people cooking badgers, foxes, hedgehogs or any other of our native species (apart from pheasant, guinea fowl and rabbit etc).

I have never heard of anyone cooking a squirrel....don't think us English would do that.... it's a rat with a bushy tail ! Hedgehogs were cooked years ago I understand but badgers etc ....no way !... In Africa they eat anything that moves.... it's bush meat but they are a lot more hungrier than us English !!

Apparently some people cook hedgehogs in clay and Hugh Fernly-Whittingstal (River cottage) lists recipes for 'flightless pigeons' (squirrels) in his books.

Badgers and foxes don't tend to be eaten, but I think Hugh Fernlegh-Whittingstal may be the place to start your research.

English country folk used to eat hedgehog. They covered it in mud then baked it slowly in an open fire; when cooked the prickles came away with the dry mud casing - I've never tried it myself, but it was supposedly very tasty. (Not to be confused with modern day hedgehog flavoured crisps!)

I've had pigeon in a Morrocan, I think, restuarant in London a couple of years ago. I was very nice, as long as you don't imagine it being one of the disease bags that fly around the city.

hedgehogs are a delicacy, supposed to be an old gypsy recipe.
They are wrapped in clay and baked in an open fire.
