Here's a simple and tasty salsa I make for all my parties.
4 large tomatoes, small dice
1 medium onion, finely minced
1/2 bunch cilantro, coarsely chopped
1 jalapeno, seeded and finely chopped
Combine all ingredients in a bowl and mix until combined. Serve with tortilla chips.

Put on 2 pots of water to boil. Put 2 tomatoes in one and peppers in the other. Boil tomatoes a minute or two till skin splits, peel. Boil peppers until soft, about ten minutes.(you can also roast peppers till skin turns black and peel), The amount of peppers depends on how hot you want the salsa, and the variety of the pepper. This is also good with a couple of boiled tomatillos. Put in blender with a clove of garlic and salt, pepper, maybe a teaspoon lime juice and a pinch of cumin. Fresh cilantro is also good to add, about 1/4 cup for this recipe. You can change any or all of this. Salsa is whatever tastes good to you. You can add onion if you want, you can just blend everything up fresh and boil for a few minutes, You can make it chunky or not. There really are no hard fast rules for salsa. You could even sautee or grill all the ingredients first. A friend of mine likes to add vinegar=just a splash to her salsas.

I hope this helps......
Salsa
Here's what you will need to make it:
* two 14-ounce diced, spicy tomatoes
* 2 ounces diced green chilies
* 2 cloves of garlic, diced
* 3/4 cup chopped cilantro -- it's an herb that looks like parsley
* 1 medium onion, chopped
* pinch of salt
* tortilla chips
* bowl
* sharp knife
Here's what you have to do:
1. Put all of the ingredients in a bowl and stir around, adding the green chilies to taste. (This is what makes it spicy!)
2. Now take a chip and dig in!
I don't know what to do with the red peppers, so sorry. Have a great day!!!

Depends on how much you want to make...I use about 4 - 5 medium size tomatos, 1 medium onion, a couple of peppers ( whatever heat level you prefer) 1 small bundle of cilantro & lime juice. Chop veggies about the same size or else throw in the food processor. Stir all together, season with salt & pepper & place in fridge....Will keep for about a week, so make plenty - you'll eat it up before you know it!!

First of all remember this rule 2 tomatoes per chili. Now salsa can be made fresh or cooked I myself prefer fresh. It's easy and no cooking involved. You will need tomatoes, onion, chili's, cilantro, and lemon juice. dice up all the ingredients. Add these to a bowl pour the lemon juice over it all add salt to taste and there you have it fresh salsa.

what kind of tomatoes do you have? i use a dozen Roma tomatoes. 1 green bell pepper, 1 yellow/orange bell pepper, 1 vidalia onion, 3-5 cloves of garlic, 1tsp. lemon or lime juice, 2tsp.sugar, 1tsp. salt
a touch of cilantro. and enough hot peppers for the desired heat. i personally use 6-8 jalapenos. chop up all ingredients, mix together and enjoy.for best results i let it sit in refrigerator for a day or 2 to let the flavors blend together. it will get watery so you'll have to drain the excess off once in awhile. ENJOY!!!!
