Don't use your parents. I'm assuming this is a college application essay. A good portion of respondents will use their parents. You want to stand out, so unless your parents are truly extraordinary (Nobel prize winners, say) don't use them.

Pick an obscure event or person. A book you read. A tragedy. A triumph. The most unusual essay in this vein that I ever read was about the Red Sox winning the World Series. The essay was fantastic. One of the things you want to do is connect with your reader, who has not met your parents and more than likely has not been to your home town. Pick something with scope.

Hi Ali,
The people who I have always admired most, are my parents. The older you get, the more you love them. Take some time to talk to them about their exciting adventures, how they grew up, and how your life has changed theirs. You'll learn more about them than you ever thought possible, become closer, and be in awe of them.
Best of luck to you!
