You may substitute Chocolate Pudding (ANY Flavor) for Pistachio Pudding in below recipe...real yummy!
PISTACHIO DREAM CAKE: (4 Layers)
1 1/2 cups flour
1 stick margarine, melted
1/2 cup walnuts, finely chopped
1 (8 oz.) cream cheese, softened
1 cup confectioners sugar
1 (8 oz.) Cool Whip, thawed
2 (4-oz.) packages Instant Pistachio Pudding
3 cups milk
In a small bowl; combine flour, margarine and walnuts. Spread evenly into a greased 9x13 baking pan. Bake at 350 degrees for 15 minutes and set aside to cool. In a medium bowl; combine cream cheese, confectioners sugar and 5 Tablespoons of Cool Whip. Pour this mixture over the cooled crust layer and let set for 15 minutes. In a large bowl, combine pistachio pudding and milk; stirring until thickened. Pour pudding mixture over cream cheese layer and chill for 15 minutes. Top off the final layer with the remaining container of Cool Whip. Refrigerate. Serve.
HEAVENLY HASH CAKE:
1 (12oz.) pkg. chocolate semi-sweet chocolate chips
4 eggs (separate)
2 teaspoons sugar
1/2 teaspoon salt
1 teaspoon vanilla
1 pint whipping cream
1 cup pecans or walnuts, chopped (I use walnuts)
1 Angel Food Cake
Melt chocolate chips. In a small bowl, beat egg yolks and add to chocolate. Stir. Beat egg whites; gradually adding sugar until peaks form. Fold whites into chocolate mixture. Stir in nuts, vanilla and salt. Whip the cream and fold in last. Break cake into chunks and cover bottom of tube pan or deep bowl. Cover with a layer of chocolate mixture. Add another layer of cake pieces and cover with remaining chocolate mixture. Chill in refrigerator overnight.
CHOCOLATE CAKE:
1/2 cup margarine (softened)
2 eggs
1 1/2 cups sugar
1/2 cup HERSHEY'S Cocoa
2 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup milk
1 teaspoons vanilla extract
1 cup boiling hot water
In a large bowl cream together margarine, eggs, sugar and cocoa until fluffy. In another bowl, sift together flour, baking soda and salt; add to butter mixture. Beat in milk and vanilla extract. Stir in boiling water (batter will be thin). Pour batter into prepared pans. Bake at 350 degrees for 25 to 30 minutes or until wooden toothpick inserted in center comes out clean.
Cool 10 minutes; remove from pans to wire racks. Cool completely.
CHOCOLATE FROSTING:
1/2 cup margarine or butter, softened
1 3/4 cup confectioners sugar
1/4 cup Hershey's cocoa
1 teaspoon vanilla extract
3 Tablespoons cold water
Cream all ingredients together until spreading consistency.

Cool & Creamy Chocolate Fondue
Ingredients:
3/4 cup semi-sweet chocolate morsels
1 container (8 ounces) frozen whipped topping, thawed
1/2 teaspoon Pantry Korintje Cinnamon
1/2 teaspoon rum or vanilla extract (optional)
Assorted fresh fruit dippers such as whole strawberries, apple, peach or pear wedges (optional)
Directions:
1. Place chocolate morsels and half of the whipped topping in Small Batter Bowl. Microwave, uncovered, on HIGH 1 minute or until chocolate is melted and smooth, stirring after each 20-second interval. Fold in remaining whipped topping, cinnamon and rum extract, if desired; mix until smooth. Cover; refrigerate at least 30 minutes.
2. To serve, spoon fondue into small bowl. Serve with fruit dippers, if desired.
Yield: 2 cups (16 servings)

Do a "crustata" (I think thats how its spelled) It is an Italian desert that sounds way more fancy then it really is. It is pretty simple too.
Make any pie crust recipe you can find in any cook book. Roll it out to an average size as if you were making a pie. Fill liberally within about 2 inches of the edges with raspberry jam (must use jam not jelly)...or any jam for that matter. Fold the remaining 2 inches of crust over the sides. Sprinkle with sliced almonds or slivered almonds or even pine nuts if you can find them. Bake at 350 until golden brown. You can slice it just as you would a pie.
Make sure to do all the prep work on the baking sheet! This way you do not have to transfer the finished product. Good luck!

Cherry Enchiladas

Yields: 5 servings
"Cherry Pie like you've never had it before! Cherry pie filling wrapped in flour tortillas, soaked overnight in a sweet liquid, then baked. I used to work at a bed and breakfast, and we would make this sometimes for catered luncheons. I added my own touch with the almonds."
INGREDIENTS:
1/2 cup water
1/2 cup butter
1/2 cup white sugar
5 (10 inch) flour tortillas
1 (21 ounce) can cherry pie filling
2 tablespoons white sugar
1/2 teaspoon ground cinnamon
1 tablespoon crushed sliced
almonds
DIRECTIONS:
1. Grease a 9x13 inch baking dish. Combine the water, butter and 1/2 cup of sugar in a small saucepan and bring to a boil. Place a few spoonfuls of cherry pie filling just slightly off center of each tortilla. Roll up and place seam side down in the baking dish. Pour the hot liquid over the 'enchiladas' making sure to coat the tops completely. The mixture will be watery. Cover and refrigerate overnight.
2. Preheat the oven to 375 degrees F (190 degrees C). Combine 2 tablespoons sugar, cinnamon and almonds in a small bowl or cup; sprinkle over the top of the enchiladas.
3. Bake for 35 to 40 minutes in the preheated oven, or until outside edges of the tortillas are golden brown. Let cool slightly before serving.

Here is a recipe for a cake I know will be delicious and the talk of the party. Trust me, when i make it....I get asked to make it for the next event. 45 people? Not sure how many cakes you will need maybe 3? Anyway you will need the following for each box of cake mix you decide to make.
1 box of Strawberry cake mix
1 tub of cool whip (almost all the way thawed)
1 box of instant vanilla pudding
and 1 bag of frozen strawberries (thaw out in fridge the night before-whatever u do, make sure these are thawed all the way)
Make cake and let cool
Spread thick layer of vanilla pudding all over top of cake
Top entire cake with THAWED strawberries
Then top with lots of cool whip
Pat with spatula to make pretty (sticking up things)
Thats it!!!!!!! Easy! Easy! Easy!
Here is a great hint. Go to the dollar store or grocery store and by a roaster tin pan (the kind you can trash afterward) Roaster (meaning the height is almost double a regular size cake pan) this is very important, because once your cake rises it will almost come to the top of a regular pan and you will not have room for the goodies!

its probably past your reunion, but you could use this next time. By a premade pie crust (gram cracker Keebler) in the silver tin. Also buy fresh strawberries, strawberry jello and cool-whip. Follow the directions on the jello for making it with fresh fruit MAKE SURE TO DO THIS! when you have finished making the jello, pour it into the premade pie crust.
Also follow the directions on the pie cruse, you have to use an egg white wash on it and put it in the oven for 5-10 min.
After the pie crust is done pour the jello and fruit into the pie crust and put in the fridge till set.
That's it, cut it up and let everyone put on their own cool whip on it. This is the best pie I've ever had!

Okay this is a very easy recipe & very yummy
Ingredients
1 roll of cookie dough
peanut butter
fluff (marshmellow topping)
m&m's
Corn Chex
Roll cookie dough into a brownie pan. Smush down to fill out pan & put in oven for 15 min (preheat oven beforehand)
Take out & scoop tablespoons of pb & fluff onto the cookie dough.. bake for 1 minute.
When this comes out use a spatula to spread melted pb & fluff around dough. Bake for 1 more minute
Sprinkle w/ corn chex & m&m's & bake for 3 more minutes.
Let cool & put entire pan in the fridge for at least 1 hour.
Once chilled slice & serve.
I recommend keeping them cool until your party.. the pb tends to get melty in hot tempteratures.
These bars sound kind of wierd but I garentee everyone will love them!

I just found this dish this summer and I love it!
1 box Fudge Brownie Mix
1/2 cup vegetable oil
1/4 cup water
1 tsp almond extract
2 eggs
4 cups vanilla ice cream, slightly softened
1 bag (12oz) frozen dark sweet cherries, halved (you will probably need to half them yourself, I haven't found them already halved yet, but it's not hard)
Chocolate syrup and Maraschino cherries (optional)
Heat oven to 350. Grease (really well) a 9x13 pan. In a large bowl stir brownie mix with oil, water, eggs and almond extract with a spoon until well blended.
Bake 22-25 minutes or until toothpick comes out clean. Let cool completely, about 1 hour.
In a large bowl mix ice cream and cherries. Place heaping spoonfuls of ice cream mixture over brownies; lightly press with back of spoon to smooth. Freeze at least 1 hour before serving.
If too firm to cut, let stand at room temp for 10 min. Drizzle each serving with syrup and garnish with a cherry.
* I have found that cutting the brownies BEFORE you freeze them makes it a lot easier to cut. Also, make sure the pan is greased really well or it will be very hard to get the brownies out of the pan once they are frozen. Good luck and have fun with your friends!

ok try this, its called "monkey bread" very tasty and a nice conversation piece too
take 2 regular cans of biscuits
1/2 cup sugar
1 tsp cinnamon
1 cup melted butter
1 loaf baking pan
nonstick cooking spray
spray loaf pan with cooking spray
mix sugar and cinnamon together in a small bowlk, set aside.
cut each biscuit into halfs. and roll each piece into a ball.
dip them in the melted butter,
cover them with the cinnamon and sugar mix and toss them into the banking pan. pour remaining butter and sugar mix into top.
cook on 350 degrees until they are slightly brown and almost crusted.
after done, turn upside down on a platter and serve

If you want simple, buy a box of brownie mix. Dress it up by stirring in caramel- stirring just enough to make it look swirly, not mixed in, or put caramel frosting on top and sprinkle with finely chopped nuts.
