I am making a pot pie with veggies, mock chicken, and cream of mushroom soup. I am using a pie crust for bottom and top. If I put uncooked rice in there, will it be cooked when the pot pie is finished cooking, or should I cook it before mixing it with the rest of the ingredients and before baking? I don't have a lot of casserole experience. Thanks in advance.

Okay, I tried this a couple of hours ago, after reading only some of the answers. I made it by NOT cooking the rice and it was a disaster. There was plenty of liquid, and I baked it for over an hour, so I don't get why it didn't work. Bottom line, I have a delicious pie crust, veggies in a sort of buttery gravy, yummy quorn mock chicken pieces that have absorbed all of the flavors, and crunchy rice. It would've been perfect had I left the rice out. Is there anything I can do to salvage this before it hits the garbage?

The rice will cook, but make sure there is enough liquid in there for it. If you're following a recipe, you should be fine. When the rice cooks, it absorbs all the flavors of the casserole and will taste great. Enjoy!

You can get the rice cooked however the rest may not be so good. Can you remove the rice casserole from the pie crust? if you can you may be able too. Add water or chicken stock to your rice mixture. (use equal water to rice since you already have some liquid in there, normally it would be 2/1 water over rice) mix well. place in oven proof dish, bake at 375 degrees for at least 45minutes to 1 hour, stir halfway through. Make sure you taste it too at the half way point. When the rice is tender add it to your pie crust and just finish warming the crust. I bake rice as a preference vs boiling and simmering. 2 cups of uncooked rice with its liquid takes about an hour and fifteen minutes at 400 degree covered

You don't say what all is in your casserole but you can try adding water at about a 2:1 ratio to the rice and baking in the oven until the rice is done. Add less water if you have already put in liquid such as canned soup. Also take into consideration the liquid content of any fresh or frozen vegetables that you may have added.

It depends. In order for it to cook you need to make sure there's plenty of moisture for the rice to absorb. The dish should also be covered, and you need to make sure the rice has enough time to cook, which will vary depending upon temperature and how much moisture there is.
Putting the rice in the casserole uncooked will make the rice more flavorful, but it would be safer to cook it first to avoid potential problems.

If you use a quick cook type of rice it will certainly cook. The slower cook rice type will probably cook, if you have enough, but not too much liquid. I usually use minute rice and it comes out fine.
Oh, yeah, brown rice would make a difference. It takes longer to cook.

It depends on the time you're cooking everything else. If the chicken and crust is raw and it's going to be baking for a while then the rice will have enough time to cook. But if you're using prebaked chicken and the crust is going to cook in a few minutes then obviously it just won't be long enough.

It depends on the casserole and the time it takes to cook. Is it watery, so there's plenty of water for the rice to absorb, or is the soup the only liquid? It's concentrated soup, right? Are you talking about white rice or brown rice? Lotsa variables...

Sorry, you'll have to cook it before you put it in. I know from experience. The creamy mixture in a casserole is too dense to penetrate the grain of rice all the way through so you'll end up with a crunchy, undercooked rice.

No, the rice will not be cooked through and your vegetables probably will not be cooked either if they have not been parboiled (pre-cooked a little bit) before adding to the pot pie. If they are fresh vegetables they will have to be parboiled. If they are canned vegetables, they can be drained and added straight to the pie. But in either case, your rice will need to be cooked in advance.
