When anyone is having a party, I'm always asked to bring one of my two favorite appetizers ( Good friends will often ask me to fix both!) They both are quick, easy & yummy!

1. Crab cheese ball.... 1 pkg cream cheese @ room temp to soften, 1 lg pkg shredded sharp cheddar, 1 pkg imitation crab meat, 1 tsp worchester, several dashes of tabasco & a couple tablespoons of dried chives. Mix all together & form into a ball. Roll in chopped pecans or walnuts & serve with assorted crackers.

2. Rotel from hell dip......Brown 1 lb hamburger or sausage & drain. In a crock pot, combine meat, 1 large pkg velveeta mexican cut into chunks, 1 can rotel tomatos. Heat until melted & serve with chips, sour cream, japalenos & salsa or picante sauce.

Either one will make you the hit of the gathering!

Coconut shrimp. Dip shrimp in flour, then egg, then a mixture of coconut and bread crumbs. Fry for a few minutes per side. Serve with a dip of orange marmalade mixed with a little white rum.

I've been making it for years - I think it's the best recipe for a cheese ball that I've come across:

PINEAPPLE CHEESE BALL

16 oz. softened cream cheese
½ tsp. Accent
½ tsp. garlic salt
½ tsp. finely chopped onions
¼ cup finely chopped green peppers
¼ cup well-drained pineapple
1 cup chopped pecans

Mix all ingredients except pecans. Form into a ball and put in refrigerator until firm. Roll in nuts.

I love my mexican potatos. I put an Idaho Potato in the microwave for 5 mins. Then I take it out and mash it with a fork. Then sprinkle cheese, salsa, sour cream and green onions on it. It's awesome!

Actually...I like fancy for guests and just when I want something different. But when its just for myself I like something simple like potato salad or those Little Smokies mini sausages simmered till they are heated through with my favorite bottled (or home made) barbecue sauce. Simple and yummy.

I LOVE making bruschettas. All you have to do is toast bread, put some salsa on it, add cheese and put it in the oven.
