I'm looking for some tricks that you did to alter your Honey Wheat which you liked. It's the next batch I'm making, but I haven't made one before.

For 5 gallons
5 lb 2-Row Pilsner Malt
4 lb Wheat Malt
1 lb Clover Honey (in secondary)
1.5 oz Crystal Hops 60 min
.5 oz Saaz hops 20 min
1 oz dried orange peel 10 min
½ oz cracked coriander seeds in secondary
1 tsp 88% Lactic Acid at bottling.

Mash low about 149 degrees for 90 minutes
Sparge and boil and chill as usual. Ferment with a clean yeast such as Wyeast 1056
After primary fermentation rack. Boil about 1 qt water, turn off heat and dissolve honey. Add cracked coriander, cool and pour into secondary making sure you have some headspace to allow for the krausen. F.S.G. should be 1.006 or lower. Add the Lactic acid when bottling or kegging.

.75 lbs. American Caramel 60°L info
0.25 lbs. Dark Brown Sugar info
1.5 oz. Fuggle (Pellets, 4.0 %AA) boiled 60 min. info
.5 oz. Fuggle (Pellets, 4.0 %AA) boiled 6 min. info
Yeast : WYeast 1098 British Ale info

Mash @ 122F for 30 minutes, and then at 154-156F for 60 minutes, raise the temp by adding 1 1/2-2 gallons boiling water, 1/2 gallon at atime. Sparge normally & Boil for 90 minutes add the brown sugar at start of boil. Ferment as you would for a good ale. I am looking for a House Best Bitters, will brew this on Valentine's Day with my honey, I will post results in comment section once it is carbonated and I am able to sample. Update: 6-10-2005, I have made this three times, it is a WINNER ! ! !
