What are some great flavor combinations that go well with root vegetables? I'm particularly looking for protein (meat) + "something" to go with root vegetables.

fennel and fish, parsnips and roast beef, pan roasted potatoes, garlic, carrots, with a splash of olive oil....roast pork with yams

Cooking red meat and root vegetables with red wine and some herbs (basil or thyme) is pretty good. Also, sweet potatoes and chicken both work well with chipotle or salsa.

get a nice sized roast, cut slits in it at several spots and put garlic cloves in the slits. sprinkle thyme, a little salt and pepper, and rub it in good. bake it covered with big chunks of carrots, potatoes, and onions. serve it with corn and a salad and you have a great meal. if you have emeril's southwest seasoning put that on the meat before bakeing, it's good flavor.
