I use the crock pot a lot too. Makes things so much easier. Below is a link to a site with 100's of recipes I have tried several.

Love my crock pot, and I love making chili in it even more. Here's my recipe: Combine in the crock pot: 1 lb ground beef, crumbled 1 large onion, diced 2 green peppers (or 1 green, 1 red), diced 1 can tomato soup (don't dilute with water -- just dump it in) 1 can diced tomatos 2 Tbsp chili powder 1 Tbsp vinegar salt pepper 1 can kidney beans, undrained (yup -- just dump that in, too) I cook my chili on low up to 8 hours (when I'm away at work) or high for 4 hours. You can also substitute ground chicken for ground beef for a healthier version. Enjoy!

We just had this for dinner:
Beef Stroganoff
1 can cream of mushroom soup
1 small can sliced mushrooms (do not drain)
1 french onion soup mix
1/2 cup of red wine (or more-your choice)
1-2 pounds of stew beef
Put all in the crock pot, cook on low all day. Serve over egg noodles or rice.

You don't need sauce or liquid to roast a chicken - just roll foil into balls to keep it off the bottom of the pot. Put a whole cleaned chicken on the foil, set it to low, and go about your day for the next 8 hours. It doesn't get crisp like in the oven but it's a really good chicken.
You can also cook a pork or beef roast in watered down BBQ sauce, then shred it and serve it on buns. Very tasty, and you can stretch it across 12 servings.

buy a whole pork butt at the grocery for about 6 bucks it will probably have a bone in it, don't panic. concoct a dry spice rub out of dried onion powder, garlic powder paprika chili powder salt and pepper and some red pepper depending how hot you like things. rub it all around the outside of your cleaned and dried piece of pork and toss it into the pot on auto. squirt a half cup of ketchup in there, some mustard, some bbq sauce, maybe you lke worcestershire sauce or chipotle smokey tabasco....you get the idea. I throw in about half a beer too just so there is liquid covering about half the butt. cook 8 hours and the stuff is just falling apart. pull out the bone with some tongs fish out any big chunks of fat you see. then go in with a couple forks and just pull the fibers apart so that sauce covers everything. For less fat, somethimes I will strain the liquid off and use the gravy separator to eliminate further fat. So now you have enough pulled pork to feed a family of 4 for about 4 days. think finger sandwiches with pepper jack cheese or pizza with bbq sauce and pulled pork and chopped scallions. Add it to baked beans from a can for a homemade feel. make it into a quesadilla or wrap it up like a taquito. Believe it or not the stuff can be frozen for months too.

Beef Stew Crock Pot
Vegetables Choose your favorite mix of vegetables from:-
Frozen - these cook up just fine, will be soft but still seem to hold together.
Canned - same as frozen. Though tin peas really loose their color and go a grey sort of color.
Pre-Cut - fresh, pre-cut from the super-market (for when feeling lazy).
Fresh - cut into about 1 inch square pieces. Feel free to prepare the night before.
Meat Choose cheap, inexpensive cuts. The ones that are tougher and benefit from the slow cooking.
Our favorite is what we call blade, round pieces of stewing meat full of gristle (the meat you would ordinarily ignore – but it cooks up a dream and the gristle goes soft and yummy).
Cut into bit size chunks or leave whole, doesn't really matter.
Flavoring Your favorite flavor of tin soup. We usually choose a beef based one like ‘Minestrone’ or ‘Italian Meat and Veggies’.
Alternatively use one of those ‘Simmer Sauces’ – the ones you use for stir fry’s. We have found that the no name brand ones (which I don’t like in stir fry’s), work well and; they are cheap. Try ‘Honey Mustard’ – my favorite.
Optional Extras Worcestershire Sauce - tablespoon or two
Soy Sauce - tablespoon or two
Tomato Sauce - tablespoon or two or more
Tin of Tomatoes.
Crushed garlic and/or ginger - teaspoon or two.
Herbs - best put in during last hour of cooking- teaspoon or two.
Salt and Pepper - added at end - to taste.
DIRECTIONS Chuck the Veggies in first, put the meat on top and pour in the soup. That’s it. Nothing else.
Do not add any water, the enclosed slow cooking will retain heaps.
Add any of the optional extras.
Cook for about 4–6 hours on high OR 8–10 hours on low.

Here are some excellent sites for finding all the recipes you could ever use.
The crock pot is great for soups and stews, but I have used it for whole meals. The only thing you really need to remember is that you need to use some sort of sauce or liquid in general. Hard to mess up anything in the crockpot....enjoy!
