I have some leftover chicken fried chicken from Applebee's - fried, boneless chicken breast. In the past I've tried reheating it in the microwave, but it ends up dry and tough. I'm thinking of trying it in the toaster oven tonight, will it turn out better? What temp should I set it at? Should I wrap it in tin foil or anything? Any other ideas?

Wrap it in tinfoil and put just a tiny bit of water in with it to keep it from drying out. Use a lower temperature (300 or so) and check on it frequently.

Depends on what you want to do with them. If you just want them cooked, I'd put them in a bowl with lightly salted water and microwave them until they're cooked through (the water keeps them from becoming dry and tough). Otherwise, you can let them thaw, put them on the broiler pan from the toaster oven and bake or broil them. To broil them, heat up the broiler part of the oven and put them about an inch away. Monitor them closely. When they've browned, pull the rack out, turn them over and broil the other side. If you have a small casserole pan, you could also use that to roast them. There are a multitude of different ways to do that; to start, you could try putting them (thawed) in the pan along with some carrots and potatoes that have been cleaned and cut into chunks. Add salt and pepper, and about a quarter to a half inch of chicken stock (again, to keep things from drying out) - if you have herbs like rosemary, add those too. Cook at about 350 degrees until everything's done (will take quite a while, say 45 to 90 minutes, depending on how much food you're cooking and how big the chunks of vegetables are).

Pre slice the chicken and lay them out flat. Be careful not to burn them turn them over and heat the other side. Also, if you preheat your toaster oven, the element will automatically turn down when the oven reaches the right temperature, then you can slow heat it like in a regular oven. But keep an eye on it, the element will come back on when the temp is too low.

cut in up bite size chunks and heat it on 300 degrees-not to long for it will dry the chicken out!

do about 375 for about 15 minutes and put it in tinfoil
