Navajos don't exactly say "I love you", this translation literally means "my mind loves".
'ayóí 'ó'ó'ní shíni'
Pronouncing it may be a little difficult, however since you know a Navajo girl, she might be able to help you pronounce it. The accent ague used in the letters ó and í signify a high-tone which is important in the spoken Navajo language. Without it, you could inadvertently say something offensive.
I'll try to write a close pronunciation guide for you.
'a = sounds like "ah" but pronounced rather quickly.
yóí = sounds like the "yo" in "yoke.
'ó = sounds like the "o" in a surprised "oh" as opposed to a disappointed "oh", don't use the "h" though.

ní = sounds like "ne" in the word "neat".
shíni' = sounds like "shi" in "ship" and "ne" in "neck".
All the syllables are pronounced quickly with the exception of "óí" which is slightly elongated.

I wish I could get hold of one of my old dorm suite mates, Mark White. He was a Navajo from the reservation, and I'll bet he could answer that question. I'm part Cherokee and just started trying to learn a little of that language, so I'm not familiar with the Navajo language yet. Sorry I can't help right now.
