Some convents have a type of Bed and Breakfast arrangements. To verify if any B&B are available in the area where you want to visit, check with the Italian Tourist office (sorry I do not have their web site)

One convent that I know accepts reservations is located in the town of Sant'Andrea Jonio, Calabria; the convent is on a hill and from there you have a majestic view of the Ionian sea and calabrian shoreline.

yeah... near Vatican, but remember that it s not a "real" hotel, you can't sleep with person of the opposite sex (unless married), and i've heard that in some places you must go back home before a specific hour.. but i'm not sure of the last thing...
