Looking for a text book for students (due to be professional cooks/chefs) explaining - in simple terms - what happens to food when it is cooked. I had one from the Ocford polytechnical college about 20 years ago but have lost it.

Magee on Food by Harold Magee

It is absolutley the best book about food in the whole world.

It has been championed by many a fine chef including Heston Blumenthal, owner and chef of The Fat Duck in Bray, twice voted best restaurent in the world.

It has taught me more about food than any thing else I have ever read.

Jamie Oliver says that "It is one of the best cookery books ever written and it doesn't contain one single recipe".

You won't be dissapointed.
