Nothing would ever stick and it would be easier to clean!

Beause it's very hard to develop "fond" in non stick pans. and fond is key to killer gravies and sauces.

I think chefs know how to cook without things sticking to the pan. The non-stick coatings can throw off temperatures, change textures, change the chemistry of the food to some extent.

Not to mention who would want to be eating an omelet or something out at a restaurant and see some of those lovely non-stick coating flakes in their eggs? ;)

sometimes you want it to stick some, the non-stick can change the way some things cook or it stops it from getting the golden crust on the outside if that is what you are going for. So in other words there are some dishes that they work good for and some it does not.

Well if you heat a pan B4 u cook it won't stick.

fond wont form in a nonstick pan and it is hard to sear somthing in one, also all metal pans heat faster

maybe because they are not the ones who owns the pots and pans..
