Yes, I believe we are eternally immortal, our souls. We have the choice to return to Earth over and over to experience this plain of existence, as well as negativity to progress our souls. Karma and all that.
I fully believe many of us have been here many times over to learn and also teach others.

We have always existed as intelligences. We were born into the spirit world. We came to earth to receive bodies and to prove ourselves worthy. Our bodies and our spirits combined, make up our souls. after we die, we like Christ, will be reunited, Body and spirit and if we live worthily, our souls will progress eternally.

I am not sure the concept of soul was "created", I think thinkers and saints "discovered" it, and it actually is our only link to our Creator. Everything else (our organs, feelings etc.) is more earthly, soul is believed to be our gift from God. Its function is to bring divinity into your daily life---by creating compassion, faith and devotion.
