"the way you speak" and "how you speak" are noun phrases which can be used as subjects or objects, so gramatically speaking, both are correct. However, the first one is better because the second one can be ambiguous. The reason it is ambiguous is because "how you speak" could also refer to the person's ability to speak in addition to the way they speak, and the clarification of the meaning is not made until the end of the sentence. In short, the first sentence is clearer.
