Chicken leg shaped veal and pork, spiced perfectly, then browned and simmered."

INGREDIENTS:
* 1/4 pound ground pork
* 1 pound ground veal
* 1 teaspoon salt
* 1/8 teaspoon paprika
* 1 tablespoon chopped green bell pepper
* 1/4 cup crushed pineapple, drained
* 1 cup dry bread crumbs
* 2 eggs, lightly beaten
DIRECTIONS:
1. Combine ground pork, ground veal, salt, paprika, green pepper and pineapple. Shape like a chicken leg around a wooden skewer. Roll in bread crumbs, then in egg slightly beaten with 1 tablespoon water and again in bread crumbs.
2. Let stand 30 minutes in the refrigerator. Brown in frying pan in hot fat, add a little water, then reduce temperature. Cover tightly and let cook slowly for 45 minutes.

City "Chicken"
This recipe originated during the 1930's, when chicken
was expensive and hard to come by in the cities.
These mock chicken legs became a favorite.
Serves: 4
2 lb. pork AND/OR veal tenderloin - cubed
1/2 cup all-purpose flour
1 Tbls. seasoned salt
1 1/2 tsp. black pepper
1/4 cup butter OR margarine
2 cups milk - low-fat okay
2 cups beef broth
2 Tbls. Worcestershire sauce
-Thread meat cubes onto 4" bamboo skewers.
-Combine the flour, salt, and pepper on a plate; roll skewered meat in flour mixture; reserve leftover flour mixture.
-Brown all sides of meat in butter.
-Combine remaining ingredients with the leftover flour mixture; add to meat.
-Cover and simmer over low heat for 1 1/2 hours, stirring occasionally.

Here's one for you to try out:
MOCK CHICKEN LEGS
1 lb. veal, cut in cubes
1 lb. lean pork, cut in cubes
Place on small wooden skewers (5 or so pieces each) alternate veal and pork cubes on skewers.
Lightly sprinkle salt and pepper over meat. Scramble some eggs with a little milk added in a dish. Dip in pork chops in egg and roll. You may have to add more eggs, keep beating or turning over the mixture with fork often. Add some more salt and pepper Then roll in cracker meal or crumbs. .
Brown in electric frying pan in butter for about 20 to 30 minutes.
(May be stored in refrigerator until used.) Place in dripping pan with small amount of water to steam. Keep moist. Bake at 325 degrees for about 1 1/2 hours

MOCK CHICKEN LEGS (PINTO BEANS)
1 onion, grated
6 tbsp. butter
1/2 tsp. black pepper
1/2 clove chopped garlic (optional)
1 egg
1 tsp. salt
1/2 tsp. celery salt
1 1/2 c. mashed beans, drained
1/3 c. bean juice (optional)
Bread crumbs
Fat for frying
Melt butter over low heat; add onion, cook gently 5 minutes. Add salt, pepper, garlic, celery salt. Blend bean juice with mashed beans. Add this mixture to onion mixture. Pour into dish and chill until ice cold. Form mixture into shape of chicken legs.
Roll in beaten egg and bread crumbs. Chill again until firm or overnight. Fry in deep as chicken until nicely browned. Drain on absorbent paper and insert stick to represent chicken leg. (Sticks are at meat market.)
Yields 9 large sized legs or 12 medium size legs. Serve hot with cheese sauce if desired.

I have never personally made this dish, but a bit of internet searching came up with:
This one sounds pretty easy:
GLADYS' MOCK CHICKEN LEGS
Printed from COOKS.COM

1 lb. beef, cut in bite size pieces
1 lb. pork, cut in bite size pieces
2-3 eggs
Cracker crumbs
1 can cream of mushroom soup
1 pkg. Lipton dry onion soup mix
Put pieces of meat on wood skewers alternately.
Beat eggs with a little milk.
Roll "chicken leg" in egg mixture, then in the cracker crumbs.
Fry in oil until brown.
Layer in roaster.
Pour off extra oil.
Add water to pan, mushroom soup and onion soup mix.
Cook this up and pour over "chicken legs" in roaster.
Make sure you add enough water to cover meat.
Bake at 350 degrees for about 3 to 3 1/2 hours.

Cut fat from meat.
Place in fry pan on medium heat to melt.
Cut meat into strips.
Start with beef strips, then pork, continue to place on stick alternately.
Crush saltines to fine crumbs.
Mix eggs, water, pepper with fork.
Dip meat filled stick in egg mixture, roll in cracker crumbs.
Lay carefully in hot fat.
Turn when golden.
Set on end in casserole with sliced onion on bottom.
Cover. Bake at 325 degrees about 2 hours.
