So this time i DIDNT open the oven while my sponge cake was still in it,but as soon as i took it out the middle sank!!!!
Why?!!!!!!!!!
i did fill the crater up with whipped cream and berries and it tasted great ,but that doesnt explain why my cakes keep sinking!!!
Is it karma?
Or am i just useless?

this is only your second cake (unless there were others you haven't told me about LOL) so I wouldn't worry too much, we learn by making mistakes. I wish I could tell you why it's happening, but I don't know much about cake baking. although it looks as though people have left you excellent advise here (just not Lola). try again! always try again. if nothing else you can always eat the mistakes, and you even admit it tastes good! what fun!! LOL

Hey, don't feel bad. And you are far from useless! Sponge cake is just like life – sometimes it works out fine, and other times it gives you that sinking feeling. It's what you do with the cake after it's out of the oven that counts, and you seem to have handled it excellently in the past.
You can spend all kinds of time analyzing the recipe, ingredients, temperatures, and cooking times to get it "right," but you've show a flexibility that many cooks seem to lack (e.g. "What do I do if it doesn't turn out like I planned?"). Kudos for your ingenuity!
Try a pumpkin cheesecake next time, or a carrot cake, or something you've never tried before — if someone thinks they MUST have sponge cake for dessert, then they're not a very flexible guest to begin with. Variety is the spice of life, they say…

Sponge cake does that for two reasons. One: You didn't cook it long enough, thus when the cake is moved, the center falls. and TWO: Movement. It's a delecate balance, and one which MUST be done slowly and carefully.
Check the center of a fallen cake to see if it is 'mushy' looking. (You know the look, the center will have no bubbles, and look still moist.) This is an indication that the mixture may have been off, too. Too much shortening, too little liquids, too much liquids - these all can be indicatiosn of a 'sinkhole' in the making.

next time make sure your oven is at the temperature it's suppose to be, the tempature labeled on the box, and make sure you keep it in the whole time. one way to check it before you take it out of the oven stick a toothpick in the center of the cake and if the toothpick comes out clean the cake is done. if the toothpick comes out with unbaked cake batter on it leave it in the oven for a few more minutes

When i was alittle girl,my mom told me NO jumping arounrd when She made a sponge cake because it would sink so...I had too sit quietly.....Also,you have too have the CORRECT oven temperature,because if the temperature is too LOW it won't cook properly!!!!!!!!!!!!!!
It sounds like you made a bad situation a delicious one.....At least. you salvaged your cake and it was good. I forgot to put inbaking powder for my fiancees birthday cake 4 years ago...and it didn't raise,it was a solid brick...
I ran too A bakery and got him a real birthday cake.....That was a horrible experience so..I will not ever attempt to bake a cake ever again.....
So....don't put yourself down, try it again.....good-luck

It sounds like you didn't cook it long enough. The cooking time is a general time, not an exact time. Always check the middle with a toothpick and leave it in at about 2-3 minutes longer at a time if it isn't done in the middle yet. And you AREN'T useless!!! This is how you learn...trial and error...trial and error. Keep working at it.

Sounds like there is too much liquid that steams up during cooking.
Once it is out of the oven the steam dissipates and the cake sinks.
