Good Substitute For Eggs:
Ener-G Egg Replacer & follow directions on the box.
2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg
1 banana = 1 egg in cakes

You take an ordinary cake mix and add a full can of any kind of soda pop.
Seriously, I got the recipe at a Weight Watchers meeting and it really works.
You can add a can of coke to the powdered mix and the cake comes out perfectly. I'm not lying.
It's low in calories too. No added oil, no eggs mean less fat and calories.
Try it, you will be amazed. I was, and everyone I tell doesn't believe me, but it is true.
EDIT
You stir in the soda until the powder is all moist then bake it according to package directions. Does cupcakes too.
