Here's my old stand-by.
2 pounds ground beef
1/2 cup bread crumbs
1/4 cup onion, chopped very fine
1 clove minced garlic
1/4 cup bell bepper, chopped very fine
1 package of onion soup mix
1 egg
1/4 cup milk
1/2 cup ketcup
1/4 teaspoon of salt
1/4 teaspoon of black pepper.
Mix all ingredients together well, setting aside half of the ketchup. Put into a 350 degree oven covered for about 40 minutes. Remove cover, drain off the grease, and put remaining ketchup on top of meatloaf. Put back in oven uncovered for about 15 more minutes. Really good meatloaf, and the cheaper and fattier the ground beef you use, the juicier and tastier the meatloaf will be.

I asked the same question on here....and got some wonderful ideas. Ill give you my old one....and feel free to browse my questions and get the others!!
2 pounds ground chuck
2 packs of instant oatmeal
1/2 sweet vildalia onion (diced)
1/2 cup ketchup
1/2 cup mild salsa
mix all ingredients together except 1/2 of ketchup/salsa mixture
top with remaining ketchup/mixture and bake at 400 for 45 minutes or until throughly cooked
pretty classic probably....but its delicious and my kids still like this one best. Good luck.
PS....i did try the crock pot meatloaf and it was good, too. My kids like the crispy sides on my oven meatloaf, though.lol

Brown Sugar Meatloaf
. I use chili sauce or salsa instead of ketchup to give a nice contrast to the sweetness of the brown sugar.
1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 lbs lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine crumbs
6-8 servings
1. Preheat oven to 350 degrees.
2. Lightly grease a 5x9 inch loaf pan.
3. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
4. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.
5. Place on top of the ketchup.
6. Bake in preheated oven for 1 hour or until juices are clear.

First of all, I cannot even believe I am answering a cooking question (dont' tell anyone)
Mix french dressing, mustard & ketchup in with your ground beef. As it is cooking make a batch of mashed potatoes. Whip mayonaise (just a couple of spoon fulls) into the potatoes. Then remove the meatloaf from the pan and put it on a cookie sheet (upside down). Spread the potatoes on the meatloaf and finish cooking. totally filling and very good.

Turkey Meatloaf (my kids love it)
2 pounds lean ground turkey
1/2 c bread crumbs (maybe more if its still too wet)
1 tablespoon celery flakes
salt and pepper
1/2 cup ketchup
1 tablespoon milk
chopped green pepper and sweet onion to your preference
form into a square loaf and bake about 45 minutes on 375* every oven is different so check your time
Ive seen recipes that have mashed potatoes or cheese inside. My grandmother used to put ketchup and brown sugar in it as well as on top....my sister knows the recipe and shes not telling.
Ive seen them with salsa in and cheese and crushed taco chips on top. I love searching www.foodnetwork.com and www.kraftfoods.com for new recipes.

Crockpot Chili meatloaf recipe
INGREDIENTS:
2 pounds lean ground beef or ground turkey
1 large onion, chopped
1/2 cup seasoned breadcrumbs
1/2 cup chopped green bell pepper
1/2 cup chili sauce
3 to 4 cloves garlic, minced
2 eggs, lightly beaten
2 tablespoons spicy mustard
1 teaspoon salt
1/4 teaspoon dried leaf oregano
1/4 teaspoon dried leaf basil
1/4 teaspoon black pepper
ketchup or more chili sauce for topping
PREPARATION:
First, make foil "handles." Fold a 30-inch long piece of foil in half lengthwise. Place in bottom of a slow cooker with both ends hanging over top edge of cooker. The foil strip will make it much easier to remove the meatloaf when it's done.
I also put a piece of crumpled foil or rack in the bottom to keep the meatloaf out of the fat.
In large bowl, mix all ingredients except the ketchup or chili sauce for topping. Shape into a round loaf and place on foil strips* in the crockpot. Cover and cook on low for about 6 to 7 hours, or until juices run clear. Remove from slow cooker and top with ketchup or chili sauce about 10 minutes before done. Remove from slow cooker using the foil "handles."
Serves 6 to 8.

Use the recipe on the back of the Lipton onion soup but i just use the broth (I do not like those onions) Then I top it with tomato soup mixed with an equal amount of Ketchup and if you add a small amount of diced onions and green peppers it is very good.
If the family like your meatloaf why try to change it????

If you want a good but easy one, hunts has a can of meatloaf sauce i like to use. The only differences, sometimes i add extra onions and green peppers and for the last 10 minutes i melt colby jack monteray cheese over the top of it.

Hello there
I lived on dairy farm, so we had plenty of hamburg. Meatloafs were a sure plate in my house. I used to change it up by putting stuff in the middle like: cheese, veggies, a zuccini, diced hotdogs gazed w/ brwn sugar. list goes on as your imagination. Also i was known to bake it incrusteed with my favorite mashed potato recipe. Just put loaf shape on pan and smear with your potato.
