The ingredients should be available at any large grocery store. Ask if you don't see them.
4 teaspoons oil, divided (peanut or olive)
2 large eggs
1/4 cup chopped scallions (green onion)
1/2 cup carrots, diced or shred
3 cloves garlic, minced
1 tablespoon fresh ginger, skinned and minced
2 tablespoons soy sauce
2 cups cold, leftover rice (white or brown)
1 cup cooked, skinned chicken cubed
Salt and ground black pepper
Heat 2 teaspoons of the oil in a wok or large skillet over medium heat. Add eggs and cook 2 to 3 minutes, until cooked through and scrambled. Remove and set aside.
To the same skillet, add remaining 2 teaspoons oil. Add scallions, carrots, garlic, and ginger and saute 2 minutes. Add rice and chicken, cook one minute, stirring constantly. Add soy sauce and stir to coat rice. Reduce heat to low, cover and simmer 2 to 3 minutes. Fluff with fork and season to taste with salt and pepper. Stir in egg just before serving.

Chicken Fried Rice
Yield: 2 Servings
Ingredients
1/2 Red onion
1/2 Red bell pepper
=== SEASONING LIQUID ===
1 tb Chicken broth
1 1/2 tb Soy sauce
1 tb Chinese rice wine or sake
1 ts Sugar
1 1/2 tb Corn oil
=== FRIED RICE ===
2 1/2 c Chilled Chinese-style white (Sake)
1 tb Minced garlic
1 tb Minced peeled ginger
1 1/2 c Cubed, cooked chicken
1/4 lb Frozen peas; thawed
Instructions
Cut the onion and bell pepper into 1/4-inch dice.
In a small bowl combine the seasoning liquid ingredients. Set aside.
Spread the rice in a shallow baking pan and separate grains with a
fork. In a deep non-stick skillet heat corn oil over moderately-high heat
until hot but not smoking and stir-fry the garlic and ginger 20 seconds, or
until fragrant. Add onion and bell pepper and stir-fry for 2 minutes.
Add the chicken, peas, rice and cook, stirring frequently, 2 to 3 minutes,
or until heated through. Stir seasoning liquid and add to fried rice,
tossing to coat evenly.
This recipe yields 2 servings.

Chinese Chicken Fried Rice
This is my sons favorite. It is easy and you can substitute shrimp for chicken.
1 medium onion, chopped, 2 tablespoons butter, 2 cups cooked rice, 1cup cooked chicken, 4 tablespoons melted butter, 3-5 eggs, well beaten, 1
tablespoon soy sauce
6 servings Change size or US/metric
35 minutes 15 mins prep
In pan on top of stove, saute onion in butter, add rice.
Put chicken over rice.
Make a hole in the middle and add butter and eggs and stir until cooked.
Mix all ingredients together and sprinkle with soy sauce to taste
All the ingredients are easily available and the result is delicious

I cheat when I make mine. I start with a box of Dainty Chicken Flavoured Rice mix.
In a separate pan, I add chopped cooked chicken, chopped onion, a cup of peas/carrots (frozen, not canned), one can of sliced water chestnuts and one can of mushrooms (chopped). Once the veggies are cooked, I add the prepared rice mixture, some lite soy sauce to taste and that's it. (To jazz things up, I often add a large can of (drained) bean sprouts.)

Mix all of the ingredients into the flour, mix very well until perfectly blended. Pat dry the pieces of chicken which are at room temperature. Beat 1 egg (depending on how many pieces you have to fry) into some milk. Heat the oil for deep frying. Dip one piece of chicken at a time into the egg-milk mixture, roll it into the flour mixture, shake the excess flour and delicately place it into the hot oil.

ChickenFried Rice
2 cups of rice cooked
1/2 lb of chicken tenderlions minced
6 bacon strips
2 large eggs
2 teaspoons of pepper
1/3 cup of soy sauce
2 bouillon (chicken flavored) cubes crushed
2 tablespoons of vegetable oil
1/2 pound of thawed or fresh snow peas
2 red bell peppers seeded and choped
8 scallions trim and than chop
Heat a non stick skillet or wok over medium-high heat cook bacon for4-5 minutes until crisp( please stir frequently or until)Drain the bacon on a paper towel after it is cooked too perfection.Stir beat eggs and pepper into skillet and cook 1-2 minutes(should be brown on other side)transfer to platter andcut into strips. Combine soysauce, bouillon cubes in a small bowl and set aside. heat same oil againin ame skillet or wok over medium heat and sautee chicken til brown and than take out the chicken,put on platter,sautee snowpeas and redpeppers unti tender add chicken,rice,eggs,bacon ,soysauce mixture,and scallions.Mix til all is blended and continuie coking til your mixture is heated through......
Good-luck, this is soo delicious and the bacon makes it flavorable..I cook the rice too box directions as I am doing all the other stuff. it takes me 30 minutes
too make this....enjoy
