Tiramisu

Serves 8

8 ounces (250gr) chocolate semi-sweet - cold - grated
4 egg yolks
1 cup (250ml) sugar
1 1/2 teaspoons (7ml) vanilla
8 ounces (250gr) cream cheese room temperature
1 3/4 cups (450ml) cream 35%
1 tablespoon (15ml) espresso coffee instant
1 cup (250ml) hot water
1 12 ounces (375gr) pound cake frozen or crisp lady finger cookies

Set aside the grated chocolate. Mix the egg yolks and the sugar. Add the
vanilla and beat for approx. 1 minute. Add the cheese one tablespoon at a time
and mix until you get a smooth texture. Refrigerate for 30 minutes. Prepare
whip cream and add to the cheese mixture. Refrigerate for 1 hour. The above
steps can be done 2 days ahead. Mix the instant coffee and hot water. Let rest
until it is at room temperature. Cut the cake in stick like pieces to imitate
the lady finger cookies (or use the real crisp lady finger cookies). Drop cake
pieces or cookies into coffee mixture and cover the bottom of a glass bowl.
Sprinkle half of the grated chocolate then the cream/cheese mixture. Cover with
the remaining cookies or cake pieces and add the rest of the grated chocolate.
Cover and refrigerate at least for 2 hours.

Thanks to Chef Curtis Stone (TLC's "The Take Home Chef") for this recipe.

Tiramisu

Serves 6

Ingredients:

2/3 cup strong espresso (or substitute 1 tablespoon instant coffee dissolved in 2/3 cup of boiling water)
½ cup brandy
4 large egg yolks
4 tablespoons granulated sugar
2 large egg whites
2 cups mascarpone cheese, room temperature
30 (about) crisp Italian ladyfinger cookies (such as Savoiardi), or about 15 larger cookies, broken in half
Unsweetened cocoa powder, for dusting

Method:

In a small bowl, combine the espresso and brandy. Set aside to cool completely. If the espresso mixture is hot the ladyfingers will absorb too much liquid and fall apart easily. Using a hand-held electric mixer, beat the egg yolks and 2 tablespoons of sugar in a medium metal bowl set over a saucepan of simmering water until the mixture is pale and thick and forms a ribbon when the beaters are lifted, about 4 minutes.

Cool for 5 minutes. Place the mascarpone in a large bowl. Stir half of the yolk mixture into the mascarpone to lighten, then fold in the remaining yolk mixture. In another large bowl and using clean beaters, beat the egg whites and the remaining 2 tablespoons of sugar with the electric mixer just until stiff peaks form. Be sure the beaters are clean in order to help the egg whites beat up to their full volume.

Fold the egg whites into the mascarpone mixture and set aside. Spoon a thin layer of the mascarpone mixture over the bottom of a 2-quart trifle bowl. Using enough cookies to form a layer over the mascarpone mixture in the trifle bowl, submerge the cookies in the cooled espresso-brandy mixture for 5 seconds.

Place the cookies in a single layer over the custard in the trifle bowl. Spread more mascarpone mixture over the cookies to form another layer.

Repeat with the remaining cookies, espresso-brandy mixture, and mascarpone mixture to create layers in the trifle bowl, ending with the mascarpone mixture on top. Sift the cocoa powder over the tiramisu. Refrigerate until set, about 2 hours.

"Cheat’s" Tiramisu

Ingredients

DOUBLE CREAM (or whipping cream), 500ml
CUSTARD, fresh ready-made, 500 ml
MASCARPONE CHEESE, 500 ml
LADYFINGER BISCUITS, 2 c 200 gm
ESPRESSO, 250 ml
SUGAR, 1 tbs
KAHLUA or TIA MARIA, 250 ml (more or less if desired and increase or decrease the amount of espresso to make up for change)
COCOA or Chocolate Shavings to sprinkle over the top
Directions

Whip the cream, mascarpone cheese and custard in a large bowl until you have a smooth thick creamy mixture.
Combine the espresso, alcohol and sugar in a jug.
Pour a small amount of coffee mix into a shallow dish, then dunk the biscuits one at time in the coffee mix.
Create a layer of biscuits on the bottom of a large dish (I use one that is roughly 30-cm long x 20-cm wide x 5-cm deep).
Then cover this with a layer of cream.
Repeat layers two or three times.
Sprinkle the Tiramisu with cocoa or chocolate shavings.
Refrigerate for about 4 hours, or even better, prepare your Tiramisu the day before you want to eat it.
