Trouble is i'm allergic to muchrooms and hate tomatoes.

You hate tomatoes? Does that mean you don't like pasta sause or ketchup either? I have never eaten meat, fish or chicken since the day I was born and being a picky eater I just stick with what I like which is pasta. It is really boring tho and I don't know how much longer I can live in spaghetti so maybe when I hit the lottery I will hire someone to come in and make me hundreds of different vegetarian meals so I can try new things.

Do an online search for vegetarian recipies and then just read the ingredients in each of them. If they have mushrooms or tomatoes you can probably exclude them and not even know the difference. Good luck.

Check out a few cook books such as: The Greens cookbook (based on recipes from a famous San Franciscan vegetarian restaurant); the Cranks cookbooks (famous London vegetarian restaurant); macrobiotic cookbooks (they won't use tomatoes or mushrooms as they are too yin (Ithink)); cookbooks by Anna Thomas, Annie Green. Many of the recipes in these books don't require tomatoes or mushrooms or else you can leave them out. try also Middle Eastern cookbooks which tend not to use mushrooms at all and don't always use tomatoes.

Veggie Mediterranean Rissoto

-1 finely chopped red pepper
-1 finely chopped green pepper
-1 finely chopped red onion
-1 a few slices of chopped corgette (optional)
-1 cup of brown rice

.. with those ingredients add to pan and pour boiled water over. Add an oxo chicken stock cube. Add brown rice. Cook for 8-10mins, try to reduce the water to a minimum for ingredients to cook. Also try to cover pan with a lip (but stir now and again).

Add Quorn Chicken Style Pieces (as many as you want) and sprinkle a little curry powder over for flavour. Cook until the pieces have cooked (about 10-12mins) and enjoy!

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

4 heads fresh broccoli, chopped
1 1/2 cups shredded American cheese
1 1/2 teaspoons salt
2 teaspoons ground black pepper
3 tablespoons butter
2 cups crushed, seasoned croutons

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Bring a pot of lightly salted water to a boil. Cook broccoli in the boiling water for 1 minute. Drain, and set aside.
In a saucepan over medium heat, mix the cheese, salt, and pepper. Stir until cheese is melted. Add the broccoli, stirring to coat. Transfer the mixture to a 9x13 inch baking dish.
In a separate saucepan, melt the butter over medium heat. Mix in the croutons, and sprinkle over the broccoli mixture.
Bake 30 minutes in the preheated oven, until the topping is browned and broccoli is tender.

There are loads of places to get recepies... here is a great one, from a local organic farm (local to me, that is...)

Absolutley tons of ideas, and (if you're local enough - ie - south west-ish of the UK) - they can even send you out the ingredients!

This fantasy of yours does not exist. Go back to eating a small portion of everything. Your teeth are the only evidence you need to see that you evolved to eat both meat and veggies.
