Yes it is edible as I have done it many, many times especially if you roast it or microwave the squash. It will become very tender.Probably boiling it will do it too although I usually did the microwave or oven roasting bit. The skin also helps to hold the squash together especially if you have stuffed it it with say a meatloaf style mix of ingredients.

I Love butternut squash roast drizzled with olive oil. I also make butternut squash apricot and Almond chutney and in all the recipes Ive used it is removed, not saying it cant be eaten but why bother when the rest of it tastes so good.

I love the skin. Just baked in in the oven on some olive oil and half cup of water, sliced in half placed face down, cook for 30-35 mins. The skin absorbs the olive oil and it quite tasty eaten together with the squash.

Yes, it's edible, it's just a matter of taste. Personally, I don't like it, but I've seen other people eat it when roasted.

Yeah, the skin really isn't edible for humans so my first thought was compost, too. Unless you know someone nearby with goats or cows who can eat it.
