Hey....a long time ago I made a pot roast using...regular canned cream of mushroom soup and a envelope of the dry onion soup mix by Lipton...

my method is to place the roast inside aluminum foil and put the soups over the roast and seal the meat in foil allowing enough room for steam and juices..Place on a baking sheet in a oven set at 350 degrees. Most roasts take about 25 minutes per pound.

Good luck....I'm sure the golden mushroom soup would work the same as the reg. light one....PS..don't salt the meat because the soups have salt in it already you can always use more at the table if needed....you can add it but you can't take it out!....best of luck...Jazzy G.

Pot Roast w/Creamy Mushroom Sauce

2 1/2 pounds boneless beef chuck roast
1 envelope dry onion soup mix
1 can cream of mushroom soup -- (10 3/4 oz.)

Place roast in the slow cooker. Add dry onion soup mix; top with
undiluted mushroom soup. Cover and cook on LOW for 6 to 8 hours or until meat is tender.

It suggests serving it with mashed potatoes or over cooked noodles. The gravy is certainly delicious for either one of those!

I like to make it in a large cooking bag, and bake it. I put my roast in, and carrots, celery, onions, if you like garlic, and mix some water with a can of the golden mushroom sauce, tie the bag shut, and bake according to the size of the roast. It will be so tender, and also I add some potatoes cut up and quartered. It makes a whole meal. Just add some french bread, and red wine, and you'll have a great easy dinner!
