I know nobody will agree, but I promise even non-veggie eaters will love this easy side.
Buy some frozen brussel sprouts, cook them just a little bit shorter than the package reads so they are a little crispy. Put them in a container or big ziploc with a whole bottle of zesty italian salad dressing and marinate overnight. OH my gosh, GOOD!

I know your favorite is a cucumber! Um.. I would have to say.. my favorite vegetables are cucumbers and tomatoes hands down! I use cucumbers and tomatoes in my salad along with lettuce and I use Italian Dressing and sometimes French Dressing, that's LOVE. :)

Green Beans w/ carrots. I add olive oil, garlic, salt, pepper, butter and onion powder. This gets wrapped in tin foil and grilled for 20 minutes (400° )

Cucumbers, I marinate them all day in vinegar water and pepper.
Broccoli, I steam it and cover it in cheese or put it in casseroles or Brocc and Beef.
Corn on the cob, coverin butter with a little salt.

Carrots and Brussel Sprouts...steam them both. Sprinkle with butter buds (butter substitute) and the carrots get a small dollop of honey.

Avocado...although it's probably actually considered a fruit...
I like it as guacamole, in salads, on sandwiches, as a veggie burger topping, & in veggie tacos.
