Panang Red Curry is the one for me. Traditionally served with Beef in Thailand but I love it with Tofu and mixed Vegetables. (I'm not even a Vegetarian but the Tofu soaks up the curry so well). It's a little bit on the hot side so be careful if you've got a sensitive palate. Great Question by the way!!!!

Biriyani is a rice dish so it's not really a curry but Lamb Biriyani is my favourite rice dish.
As for a curry it would have to be a chicken and vegetable one.
Home-made of course!

I don't know the name of it, but it's a Thai soup with red curry, coconut milk, chicken, vegetables, and sweet potatoes. Mmmm, the sweet potato is the best part!

Vegetable Biryani is my favorite dish but it is flavored with saffron. I personally put my own homemade spice masala in just about everything I cook. I put it in an omelet this morning.
