There is Red, yellow, green, and more - The East/West Cafe in Tacoma, Wa has around 20 kinds of curry!! Trying to work through them all - but I lose track.

Green Chilis, Coriander, galangal, kaffir lime leaves, garlic, ginger, turmeric and pandan extract. Chop all in a food processor and it will keep covered in veg or peanut oil for 2 weeks
When preparing, fry the paste in coconut fat from the top of a can of coconut milk, When I was a chef in Singapore, I would got out Friday nights and have fresh prawns in green curry sauce, but you can use chicken, beef or seafood, try steaming mussels or clams with a bit.
