Although I'm English I don't live in England right now, but I assume the sweet & sour chicken & prawns are NOT in batter?

If so, then it's quite simply because things in batter might go soggy in the sauce while it's in the shop. They could always sell it with the pork balls (not testicles,) in a separate compartment of the package though, but they might not re-heat so successfully ...

It's all about selling food that still tastes good when it's re-heated, otherwise it won't sell very well..! And people are just too lazy these days to re-heat something with complicated instructions.
