Hacienda Onion Salad

4 large tomatoes, cut into eighths
1 large sweet onion, halved thinly sliced (vidalia, Texas 1015, Maui Sweet, OSO)
1 bunch fresh cilantro, chopped
1 tablespoon red wine vinegar or white wine vinegar
1/2 cup olive oil
1 tablespoon lime juice
salt
fresly ground pepper, to taste

In a large salad bowl, combine tomatoes, sweet onion, cilantro, vinegar, lime juice, salt and pepper to taste, and olive oil.
Toss well: garnish with cilantro sprigs.

Sweet Onion Salad

2 navel oranges
1 sweet onion, vidalia or walla walla onion
1/8 cup powdered sugar

Remove peel from oranges, and slice 1/8 inch slices across to make discs.
Clean onion and slice into discs also (as thin as possible).
Seperate onion slices into rings.
Put oranges and onions together in a medium to large bowl.
Sprinkle powdered sugar on top.
Toss to mix evenly.
Let sit a few minutes before serving.
Best if it can sit at least an hour.
Can be eaten as is, or used as a topping for a green salad.

Butter Chicken

Ingredients

1. Raw Cashewnuts - 1 cup (150g)
2. Garam Masala - 2 tsp.
3. Ground Coriander - 2 tsp.
4. Chilli Powder - 3/4 tsp.
5. Salt - 1 tsp.
6. Garlic, chopped - 6 cloves
7. Fresh Ginger - 1 Tbsp
8. White Vinegar - 2 Tbsp
9. Tomato paste - 1/3 cup (80 g)
10. Yogurt - 1 cup
11. Chicken thigh or thigh fillets, halved - 1 kg
12. Butter - 80 gm
13. Brown Onion, chopped finely - 1 large (200 gm)
14. Cinnamon stick - 2"
15. Green Cardamom pods, bruised - 4
16. Degi Mirch - 1 tsp.
17. Tomato Puree - 400 gm can
18. Chicken stock - 3/4 cup (180 ml)
19. Cream - 1 cup

Method:


Brown lightly the first 4 ingredients in a heated small frying pan.
Blend or process nut mixture with the next 6 ingredients (till yogurt) until just smooth. Combine nut mixture and chicken, cover and refrigerate overnight.
Cook onion, cinnamon and cardamoms in butter in a large saucepan, stirring until browned. Add chicken mixture, cook 10 minutes.
Add degi mirch, puree and stock, bring to boil. Simmer, uncovered, stirring occasionally, till chicken is cooked through and butter floats on top.
Remove and discard cinnamon and cardamom. Add cream just before serving and simmer 5 minutes. Serve immediately with Pappadums and a Tomato and Onion Salad.
Note: Recipe can be made ahead till Step 5. Cover, refrigerate overnight or freeze.

Easy

Slice 1 onion finely. Add a Little mint sauce with 1/4 tsp red chilly powder and 1/4 tsp salt. Mix throughly then add 2 tbls yogurt and 1/2 drops of lemon.

Just slice your onions finely, put into a bowl and add a sprinkling of salt. Leave to stand for half an hour and drain off any liquid that the salt has drawn out.
Dry them off and serve with whatever you like.

mix chopped onions, chopped tomatoes, coriander, mint and add a little pinch of salt and chilli powder. Sprinkle mix on top of the pappadams n serve

Sliced onion with salt chilli and vinegar. You may also add tomatoes. It is called kachumber. Go and look for kachumber in google

I just do a simple version not sure what call it, but chop onion, cucumber and bit of tomato add some mint sauce and vinegar, bit of corriander then chopped fresh chilli (optional), yum yum.

slice onion and chop some green chillies bit of salt and mix all together leave it for bit before eating.

Just chop onions with some tomato and cucumber and mix together - that's it - dead easy.

It's called kachumber - easy and quick to make. I can't give you the recipe 'cos it's my husband that makes it, not me! Google it - Pataks probably have the recipe.
