Puliyogare Recipe

Ingredients

Thick tamarind(Puli)juice - 1 cup
Salt - As reqd
Jaggery(Sharkkara) - A small piece
or
Sugar - 1 tbsp
Grated coconut for garnishing

For seasoning:
Oil - 7 tbsp
Mustard seeds - 1 tsp
Black gram(Uzhunnuparippu) - 1 tsp
Peanuts(Nelakadala) - 2 tbsp
Bengal gram(Kadalaparippu) - 1 tsp
Red chillies(Kollamulaku) - 3-4 nos
Curry leaves - A few

For grinding:
Dessicated coconut or shredded copra - 1 cup
Coriander seeds - 2 tsp
Peppercorns - 1 tsp
Asafoetida(Kayam) - A pinch
Red chillies(Kollamulaku) - 6-8 nos
Cumin seeds(Jeerakam) - 1 tsp
Curry leaves
Sesame seeds(Ellu) - 2 tsp
Bengal gram(Kadalaparippu) - 2 tsp
Peanuts(Nelakadala) - 1 tsp
Black gram(Uzhunnuparippu) - 1 tsp


Preparation Method
For the ground masala:
1)Roast all the ingredients one by one and grind until smooth except coconut. Then add dessicated coconut and grind once again to mix well.

For the tamarind juice:
1)Soak tamarind in warm water for an hour and extract juice from it. Keep it aside.

2)Heat oil in a pan.

3)Add all the ingredients for seasoning one by one.

4)Add tamarind juice and mix well.

5)Add jaggery/sugar and salt and allow it to boil.

6)Add ground masala powder to the boiling juice. Turn heat to medium and boil for few more minutes till the juice becomes thick and oil separates.

For the tamarind rice:
1)Heat little ghee and oil in a pan.

2)Add mustard seeds, black gram, peanuts and curry leaves.

9)Add cooked rice and about 2 tbsp of prepared tamarind sauce.

10)Mix well.

11)Garnish with fresh grated coconut.

:- u can just mix this gojju with plain cooked rice and eat.

Oh, fine! Ingrediants required:- Rice, tamarind or its essence, fried groundnuts, instant puliogere powder available in Malls, oil, salt, coriander and karibevu leaves.
Method:- First get the rice cooked. Get coriander and karibevu leaves half-fried. Heat the tamarind essence and add puliogere powder and salt. Mix the rice well when the heat is kept low. That's all, your puliogere is ready. Quantities are not mentioned as you are at liberty to decide. Earlier results in Yahoo Mail, please.
