The leaves are attached to the head by the bottom just cut the bottom of the cabbage and the leaves should fall off. Easy as pie.

Cut out the core and place cabbage in a large pot of boiling water for about 5 minutes..........some cooks peel off the leaves one at a time, removing and replacing the cabbage in the boiling water each time. My experience is to let the cabbage simmer for 15 minutes, remove, drain and peel off leaves one by one until you can't pull them off easily, then returning the cabbage to the water. Let the leaves dry on paper towels before you begin to stuff them to get rid of excess water. If you use Savoy cabbage ( the long stalk kind of cabbage) you'll have an easier time of it, but they are not traditional to the dish you are making of stuffed cabbage. Nope, all those Eastern European Women made it the old fashioned way, hard work, but the most amazing results..........Good luck, just thinking about it makes we want to cook up a batch myself. Traditional sides of course are mashed potatoes, with plenty of the sauce you use on the cabbage.........again, the traditional sauce to use over the rolls before you bake them is 2 cups of tomato sauce, 2 ts of sugar, 1 ts of vinegar and 1 cup of sour cream. I don't know but I worry for the folks who wish to make a particular dish, but don't know what the sides are supposed to be. Probably more information then you wanted. Again, good luck.

cut cabbage into 1/4's then remove core and you should have the perfect size leaves necessary

boil the head of cabbage for a few mins. It will make it easier to roll also. Not to long though....will get soggy...

Freeze the cabbage, and then it is easier to remove the leaves - you will have less breakage.
