1) soak the lentils in water with some celery salt. (most beans need awhile to soak--lentils you can soak for an hour and be OK). When you have them soak,ed, put the in a pot and cover them with just a quarter-inch of water--but have a tea-pot full of water on the side (You will add it in in small amounts)
2). If you have peanut-butter-- measure out about three tables-poons,and select any two browner spices--thoroughly mix them together, and drop the peanut-butter ito the lentils as soon as they begin to boil, and thouroughly stir it in--make sure it is melted throughout the lentil-broth. let the mixture boil over, adding in just enough water, and stirring it just enough to keep anything from sticking to the bottom. You are aiming at a very thick-bodies stew, which is why you keep it boiling up and keep adding just enough water to keep it under control. Occasionally take a spoonfull of lentils to make sure they don't get softer than you want.
3). if you have some celery, chop it up with the cauliflower. These are the tough vegetables that can take the longest boiling.
Add them in as soon as the lentils begin to boil.
4). add in softer vegetables, if you desire, harder to softer, as the llentils boil.
Before the next step. Put the lentils on an unlit burner, while you do step 5.
5) Dice the onions (you can do that ahead of time) Melt some butter in a pan, add tumeric or any yellowish spices and--if you have it--a dash of soy-sauce. Lightly sautee the onions, and add them, butter and all, into the lentils, for the last five minutes you have them boiling--or they will be too soft.
Preparing the separate ingredients this way will give you a surprising variety of flavors and textures. It's one of those secrets that normally never leaves the restaurant kitchen.

If it's not too late, how about a lentil stew - chop your onion, then put it, your lentils & seasoning into a saucepan with a tin of tomatoes (if you have one), and if not, just water and seasoning. Bring to boil & simmer for about 45 minutes. Serve with green veg and maybe some crusty bread.
Or why not cauliflower cheese - you cook your cauliflower, either boiling or steaming, and while this is happening whisk 1 tbs flour into about 3/4 pint milk, season, and bring to the boil, stirring all the time. Then stir in some grated cheese (the more the merrier!), and pour the result all over the cooked cauliflower. Top with either mashed potato or a breadcrumbs-and-cheese mixture and bake in a moderate oven for about half an hour!
I like to tuck a hard-boiled egg in there somewhere, and maybe a couple of tomatoes.

Bean patties! Mash up the beans and lentils with some spices and fry in a little oil. Then have a nice salad with a bit of cheese on the side. Sounds good to me! What time is dinner?

I don't know when your dinner time is, so I don't know if you have enough time to soak your lentils.
So how about making a vegetable chile.
Take your green veggies and onion and saute them in olive oil. Add 1 cup of chicken broth. 1 can of tomatoes that have been put through the food processor. Add some basil, 2 T of chile powder, 3 cloves of garlic, peeled and mashed or minced garlic, 1 T ground cumin, 1 T oregano. 2 cups of black beans or kidney beans.
You can add in some corn if you have it. Simmer 1/2 hour and add cheese if you like. You can also add sour cream to it after its done.
Good luck!

I'd use the lentils and onions to make a good pot of lentil soup and have either a salad or one of the green veggies as a side. If you have some corn meal, make some cornbread to go along with the lentil soup.

Steam the lentils and beans in water first, so they are not stringy or hard. Then put the oil in a stir-fry or frying pan and heat. Add the lentils, vegetables, cauliflower and stir fry. Make or use a good vinagrette and pour over it just before you are finished. It's great. Almost like a shish-kebab.

Soak a cup of lentil for at least 3 hours.
Dice one medium onion.
Spice to taste. I like curry powder.
Turn it into a paste using a blender. Additional water may be necessary.
Deep fry in oil.
You could always add grated cheese to the mix.
Enjoy!

Sautee chopped onions and garlic very, very slowly until lightly browned and soft. Add 1/2 cup of lentils and 1/4 tsp dried thyme, salt and pepper. Add water to cover, cover the pan, and simmer until the lentils are tender, about 1/2 hour.
Serve with brown rice and a tossed salad.
Invite me over.
