Kosher means following old testament, biblical dietary restrictions regarding which foods can be eaten, which foods are eaten together or within so many hours of each other, how food is slaughtered, and how the plates, utensils, and storage supplies that affect food are kept.
Vegan i s avoiding any and all products that were derived from or are animals. So no milk, eggs, cheese, yogurt, as well as no chicken, beef, fish, etc.
I guess hte only thing they have in common is that neither diet include shrimp and crustaceans, animals w/ cloven (split) hoof (ie: pig), fish w/o scales (ie: catfish), and so forth. But kosher diets do include meat, esp. beef, and dairy products, just not at the same time. Veggies and frutis are also ok any time.

Kosher is food prepared within Jewish religious guidelines. I.e. no meat with dairy, blessings of certain foods, meat prepared a certain way, etc).
Vegan means you do not intake any animal or animal byproducts. No meat, no gelatin in your jello, no eggs, no cheese, no milk, etc.

Kosher is "purified" for jewish people (like halal for muslims). Vegan is pure plant based food diet.
