There is this great stuff I started making from a recipe in Madhur Jaffrey's "Quick and Easy Indian Cuisine." She calls it a fresh red chutney. It's like a salsa. Before you say "But that's Indian!" let me add that she says the recipe is from the northern part of the subcontinent, and I think it seems Middle Eastern-esque. BTW that is an excellent cookbook, which I highly recommend. This is my recollection of how you make it, in about 2 minutes flat:

Thow into a food processor:

* One red bell pepper- cut out the stem, remove seeds and slice away the white inside veins - cut in rough chunks.
* Fistful of fresh dill, or even a whole bunch of fresh dill. DON'T use dried; you can use fresh mint though instead.
* One or two cloves of garlic, peeled and chopped
* Fresh or dried hot RED chiles, or some dried red-pepper flakes (optional, and the amount is up to you - I put in about 2 red chiles to start.)
* Juice of 1/2 to one lemon
* Salt and fresh-ground black pepper

* Whiz all this in the food processor briefly. Don't liquify it. You want a finely-chopped texture, like a salsa. Enjoy!
